So today I would like to share few things about my mom , although she lives in India but she love to try different cuisine .One thing she absolutely loves is pancakes,so as she is fasting these days I have made a healthy and hearty version of pancakes.I am using a super food flour for this preparation – Amaranth / Rajgari.

It Contains Lysine: Most grains like wheat are short on lysine, an amino acid, but that’s not the case for amaranth. This makes amaranth a complete protein, because it contains all the essential amino acids.
Amaranth Contains Protein: Amaranth’s protein content is about 13 percent, or 26 grams per cup, which is much higher than for most other grains. To compare, a cup of long-grain white rice has just 13 grams of protein.
- 1 cup Amaranth flour / Rajgira atta
- 1/2 cup milk to mix
- 3 tbsp sugar / honey / jaggery / gud
- 2 tbsp melted butter
- chopped fruits of your choice (I used strawberries, kiwi & oranges)
- 1/4 tsp cardamom powder /elaichi
- 1 small apple peeled and grated
- 1/4 cup water / might need more the batter has to be pancake consistency
In a bowl, mix together the milk, melted butter,cardamom powder,sugar
Add in the grated apple and mix it.
Add the flour to the wet ingredients .
Add some water slowly the batter should be like a pancake consistency.
Heat a non-stick griddle/tava, grease it with little ghee /unsalted butter or pam spray, pour a ladleful of the batter and spread it like a pancake.
Cook, till it turns golden brown in colour from both the sides.
Serve warm with more chopped fruits, crushed strawberries or with yogurt
you can use a waffle maker too ,try apple with almonds or strawberries with raisins
