Yogurt rice or more predominantly known as Curd Rice here in South India is one dish that no South Indian can finish his meal without. It a lovely combination of boiled rice and yogurt as its two primary ingredients with or without an array of veggies and fruits like carrots, parsley,pomegranate,grapes etc. I normally use whatever vegetables I have in my kitchen, and since we almost always have pomegranate and grapes in our refrigerator I prepare this great summer dish every now and then because both my entire family loves it.
What stands out for me in this light dish, that even doctors prescribe here when you have an upset stomach, is how it is so simple yet so full of nutrition and flavor. It gets ready in minutes and is immensely filling whilst doing a world of good to you. You can have it on its own or choose to have it with some veggies, roasted, grilled, stir fried, your call. Either way its delicious.
So here goes my special, and our summer family favorite;
Pomegranate & Multi Veg Yogurt Rice Bowl.
- Rice : 1 cup
- Yogurt : 500g
- Carrots : 1 medium, grated
- Parsley : 1sprig, finely chopped
- Pomegranate kernels : 200g
- Red chilli : 2 pcs
- Curry Leaves : 5-6
- Cumin : 1/2 tsp
- Mustard seemds : 1/3 tsp
- Ginger : 1″ stick, fine grated
- Chaat masala : 1 tsp
- Vegetable Oil : 1 tsp
- A small bowl of water
- Salt : To taste
Boil the rice, strain it and allow it to cool. Once the rice is cooled mix in the yogurt and add the chaat masala and salt.
Prepare the carrots, parsley and the pomegranate and keep it aside.
In a small round bottomed stick pan or a laddle, heat the oil on medium. Once the oil is hot, turn the flame to low and add in the mustard. It will start to splutter. Add the cumin, red chilli and curry leaves when the spluttering stops and the ginger in the end. Leave for about 8-1o seconds and pour the water into it turning the flame high. When the water starts boiling turn off the flame and add it to the yogurt rice and give it a good mix.
Now scoop out some into your favorite bowl, top with the carrots, parsley and pomegranate and you’re good to go!
