We’re huge lovers of the humble watermelon around here, with V asking for it every time I ask him what he would like for a snack. With the summer in full bloom here in India, watermelon with its 91% water and 6% sugar, is the perfect hydrating and energizing fruit there is. So when we thought of making some super fast summer cool treat to slurp on a hot day what better than a Watermelon Popsicle. Its so easy to assemble and blend up that it takes barely minutes yet the lingering taste keeps you thinking of it for long. I’d made a big batch because it can easily store up to a couple of days, and when we had unexpected guests over for lunch this Popsicle blew them over. Makes – About 6-7 popsicles.
Dice the watermelon in approximately 1″ cubes.
Then drizzle the lemon juice on top. Add the mint leaves, ginger slices, sweetening agent, salt and give it a mix. I find my hands the most useful tool there is at this. However you’re free to use anything else that you like.
Once done blend it all together using a stick blender or a juicer.
Pour into moulds, or if you dont have one like I didnt when I made them, you can use paper cups as well.
Keep it in the freezer until they freeze halfway through. Then push in the popsicle stick so it stays put. Leave that for an hour or so.
