These yummy things were the result of what you’d call a true blue experiment. I actually wanted to make some guacamole and use the beetroot as a topping to mini whole wheat pizzas. But when I sliced the avocado open, I discovered it wasn’t ripe enough to be made into guacamole. And there I was, beetroot grated and dough made wondering how to salvage this when the idea struck.
We had to devour these for lunch, since the pizzas and guacamole didn’t happen and we were way too famished to try something else. Not to mention V had kind of made up his mind about having pizza for lunch. So there we were having appetizers for lunch. Have you ever done that? We must have each had like eight or ten of these bites each, maybe more. It was fun though.
These Beetroot Avocado Pizza Bites are the epitome of nutrition and flavor coming together to create magic on a plate. Bags of flavor in every bite. By the way, there were a lot, and I mean A LOT, of bites, since we had these appetizers for lunch. Have you ever done that? It was fun!
200g of whole wheat dough
1 large beetroot, finely grated
1/2 of a big avocado, finely julienned
1 medium sized onion, finely chopped
2 big sprigs of cilantro, finely chopped
1 green chilli (optional), finely chopped
Our now famous No Cook Raw Mango Chutney, a small cup
Cheese spread, 4-5 tbsps
Salt to taste
Roll out the dough and with the help of a mould or cookie cutter, cut out small circles.
Take a tsp of beetroot and lay on half the number of dough circles you have, spreading evenly. Then lay some cilantro and avocado. Lastly sprinkle salt and ground pepper. Now layer the plain dough bases on top of the covered ones and gently roll them down to form one layer. Repeat until you have the desired number. Check out the pictures to help you understand.
Once done, cook them on a skillet adding a drop or two of oil per base, flipping and adding and spreading it evenly. Cook all the bases like that.
When you’re done making your bases, lay them on a tray, spread the cheese, lay the chopped onion, avocado and a little cilantro. Top with a tsp of the Raw Mango Chutney on each base. Sprinkle salt, chilli, pepper. Your delectable and guilt free Pizza Bites are ready to be gorged on!
