It is the season of mangoes, the king of all fruits. And the king makes me happy. Mangoes are rich in pre-biotic dietary fiber, vitamins, minerals. There are so many traditional dishes in Odia cuisine that involves the use of mangoes in a widespread array. Pickles, chutneys, curries, drinks, sweet dishes etc. One of my favorite raw mango preparations is this sweet, sour and hot chutney I learnt from my mother in law, that I am gonna share with you today. Making it is such a breeze as it doesn’t involve any cooking. Just assemble the few ingredients, chuck them into the processor and done! It easily stores up to two – two and a half weeks in the refrigerator so you can make a big batch if you want as well!
V isn’t a huge fan of things that have a sour flavor so this he gives a pass, but his dad and I love it so much, and since he doesn’t eat this we get to make as hot as we like! And we like it really hot! If the delectable combination of sweet+sour+hot is your thing then you’re going to love this. Use it a dip or a spread or just an accompaniment, your call!
No Cook Four Ingredient Raw Mango Chutney.
2 medium sized mangoes,peeled and sliced
1″ ginger stick, sliced
1″ mango ginger stick, sliced
1-4 green chillies, cut into smaller pieces
Palm sugar or any other sweetening agent of your choice – 1 small cup, more if you like
Salt – 1 tsp
Assemble all the ingredients into a food processor, add half a cup of water or more if you’d like it runny and give a nice whirl. Once blended, taste it and see how you might wanna tweak it, more chilli, more sweetness,more ginger whatever you gravitate towards. Improvise, taste again and you’re good to go!
