It’s getting cooler here these days and this is the second week in a row that its been pouring. Every time it rains, its takes me back to the monsoons in Mumbai. Ofcourse the rain showers here are nothing close to the monsoon back home, but on days like these, I miss home all the more. I miss the hustle bustle on the streets, the kids playing soccer or sailing their paper boats. Schools closing early and people finding an excuse to work from home. Trips to the beach to enjoy coal grilled corn cobs. Ofcourse such days would be perfect for fritters (bhajiyas) too. Unfortunately I don’t get to enjoy such moments in NC anymore.
Anyways, it was snack time yesterday and we wanted to relish something warm. Ofcourse the fritters are the first thing that came to our family mind. However in an attempted to keep our snack healthy, my mom suggested grilling pineapples. Feast your eyes 🙂
You have to believe me when I say this, that grilled pineapple is far better than the fritters we (atleast some of us) are used to back home. It was literally a two ingredient grill. Just smearing some butter on the fresh pineapple slices and grilled it on our Panini maker. It turned our pretty awesome as grilling caramelizes the sugars creating a golden brown color and intensity of flavor. I fail to understand why people often add all the extra ingredients while grilling pineapples when the fruit by itself is so full of flavor.
I am a big fan of buying fruits from Trader Joe’s, for some reason their fruits, specially the pineapples always turn out to be awesome and have never left me disappointed.
- Pineapple slices
- I have am always trying newer ways to peel pineapples. So this time, I just sliced the pineapple first, with the skin. Try to slices them evenly.
- Slice a sharp knife on the inner side of skin. I didn’t land up wasting much of the fruit.
- Voila, the slices are perfectly clean. I didn’t have to so anything further.
- Smear some butter on each of the slices on both the sides.
- Place the slices either on the grill or a flat pan or a panini maker. We used a Panini maker.The only down side of the pan is that one won’t get the crosshatch l marks, but ofcourse the taste isn’t compromised. One of my slices was thinner than the other so you can see that it wasn’t grilled when we compressed the Panini maker. We had to grill it separately. Make sure both sides are well grilled.
- Serve it warm, if you using it as a snack like we did. It also makes a great dessert when served warm with a dollop on ice cream on top.
