Finally after Diwali & Thanksgiving we are now gearing up for Christmas. We are done with our outdoor decoration s, however we still have to decorate the indoors. Will upload some pictures of the decoration later too. We have been talking to A about giving away some of his older toys, so he can make room for his new Batman cave. He is all excited to see the neighborhood decoration. We have been talking about baking cookies and breads and all kinds of goodies for Christmas. However I did want to strike a balance and make him understand that Christmas food isn’t just about baking sweets and treats. The spirit of Christmas can be enjoyed in many more ways.
So to add some Christmas spirit to our lunch , I made this red and green Christmas salad with cucumbers and pomegranate seeds to go with our meals. To add some fun I gave him a cookie cutter and look what he did.
- 2 Cucumbers, chopped or diced
- 3 oz. pomegranate seeds
- Black salt (optional)
- Feta cheese (optional)
- Herbs like mint / cilantro (optional)
- Lemon juice (optional)
- I recommend dicing the cucumbers slight larger than the size of the pomegranate seed. My cucumbers were cut for something else thus the you see them chopped lengthwise.
- Mix all the ingredients.
And here is my version. You could also enhance the flavor by adding some feta cheese and herbs like mint or cilantro which would just make the whole salad so full of flavor.
You could also just add black salt / kala namak and trust me when I say this. It will taste yummy.
