This is a special one. As I sit down to write this post, I go down the memory lane. This post brings back fond memories of life when I didn’t even know what life is all about? As a school going girl, all I cared about was finish my homework and play with my friends. Back then I didn’t have a whole lot of friends anyways. I was friends with kids of a family a few houses apart, the Mathurs. Apparently our families met because of me. Then we became family friends. I lived with my cousins and we were all girls, while the kids of this family were all boys. So at some point we became Rakhi-brothers and sisters. Anyways so, I have spent a lot of time with the Mathurs. Play-dates, family get togethers, sleep overs, we almost met everyday. Ofcourse, remember I mentioned we stayed a few houses apart. Mathur Aunty is an amazing cook. Some of my favorite dishes today are recipes she often made. This is one of them.
I was really fond of these Coconut Cilantro Rice she would make. At first thought you might actually think it sounds weird, but you have to taste it to believe it. So today’s post is dedicated to her as I am sharing her superhit Coconut Cilantro Rice. After various attempts my version doesn’t taste anywhere like hers but is still good. Dr. Mystery, my sis and BIL often request me to make this rice. I have often made this rice when I am hosting guests and they have loved it too. I guess it’s the intense flavors that sets this rice apart.
Why this rice is good for you?
- Coconuts are a rich source of saturated fats. 90% of fatty acids in it are saturated (1)
- Recent studies show that the long chain saturated fatty acids in coconut oil are not associated with IHD risk (2), instead they raise HDL (good cholestrol)

- 1 cup Cilantro
- 1 cup Coconut, shredded
- 8-10 Garlic pods
- 3 Green Chillies
- 4 tbs Coconut Oil / Ghee /Clarified butter
- 1 tsp Cumin seeds
- 3 Black Cardamoms
- 5 Cloves
- 3 Bay Leaves
- 3 Cinnamon Sticks
- 1 cup Onions, diced
- 1 cup Rice, pre-soaked
- 1.5 cup water
- Salt to taste
