Pasta and Pizzas can make an easy weeknight dinner recipe for sure. But in our household, it needs to be healthy too. So I either toss in a lot of veggies in my pasta or I make my sauce super healthy. If you are a mom like me, I like to take advantage of every opportunity I get to make food healthy. So one time I decided to make a super healthy version of red sauce this time, which to my surprise turned out to be a superhit. Ever since that day, everytime A requests for red sauce pasta or pizza, I know exactly what to make.
This sauce is thick, with a bright orange red color & a very low acidic taste. Ofcourse the color may vary everytime you make it depending on the veggies you use. Unlike the typical pasta or pizza sauces, this isn’t just made by seasoning tomatoes and onions. Infact my twist to it, is tossing in lots of vegetables and adding some nutritional value to it. This sauce is very easy to make and the best part is that, I can freeze it for later use as well. Little A has tried this sauce with both Pizza and Pasta and it has always been a hit. BTW, there are times when this sauce has come to my rescue too. It’s come in really handy when I had very little time to cook dinner for guests and all I had to do was just toss in some Tofu or Paneer (Indian Cottage Cheese) chunks into it. At another instance I even cooked potato slices in this sauce.
With kids, you can’t predict when their favorite meal becomes something they totally don;t want to eat. Some days little A is picky about eating his vegetables, while some days vegetables are like a piece of cake. So this sauce often comes to my rescue. I make it ahead in time and it turn’s out to be a great option when we have had a busy day. There have been times I have served this during play dates too and the kids couldn’t stop competing whose pasta was better than the other. Sillies!!!!
