Even the pickiest vegetable eater will be sure to love these crispy-on-the-outside, tender-on-the-inside bites of eggplant. Its one of the interesting ways to get your kids to eat veggies. Coated in a combination of Kikkoman® Panko Bread Crumbs and ginger & garlic, the eggplants develop a nice crunch in the oven, making them a lot healthier (and easier to make) than a fried version. Holiday Season is the time when we love to have friends and family come over and enjoy quality time while having wonderful and delicious food. Kikkoman® Soy Sauce is a key ingredient for our Holiday recipes. At Walmart, you will find Kikkoman® Soy Sauce in the Asian aisle and Kikkoman® Panko Bread Crumbs will be in the breading section.

Being a mom of two growing boys, I understand the importance of eating veggies along with meat proteins. Understanding that it is critical to have a colorful plate while eating food, I prefer to give my kids a variety to ensure our mission of raising healthy kids. This includes sharing lots of different kinds of foods and cuisines with our little eaters.

The best way to get the kids excited about their food is to cook with them. The prep and cooking for this recipe is easy and fun… my kids R2 & R3 helped with this one. (I like how I don’t have to worry about them picking up germs from raw meat or eggs. ;)
It might seem like a lot of work to bread each slice, but my 11 year old R2 love to help me and he recently recruited my five-year-old too :P . . . so I set up the breading station and sheet pans for them.

Before I know it, the kids were done . . . and I'm popping the eggplant discs in the oven and start whipping up my quick and easy Homemade asian sauce.  One of the interesting aspects of Kikkoman® is that it is not just an Asian sauces and marinades - it’s more mainstream and versatile, perfect for incredible holiday recipes.
In the party snack department, these Ginger -Garlic eggplant with homemade asian sauce always win so these  are perfect as an appetizer for your party, or to snack on!

It’s such a simple sauce, only 3 ingredients, Kikkoman® Soy Sauce, honey and Sriracha sauce, but totally makes these ginger garlic Eggplant  go from good to sensational. All in all they come together pretty quickly and by baking them, you save yourself the hassle of frying them, avoiding a mess and cleaning up your stove-top and other utensils and so on :D. I can easily change the main ingredient from eggplant to zucchini, heirloom tomatoes,  onions, or fennel . . . and they all turn out delicious.

THE BEST PART?

It only takes 30 minutes to make! I’ve added this dish to my get-together appetizer menu. It’s such a simple dish and yet it’s so packed with yumminess due to the Kikkoman® Soy Sauce and Kikkoman® Panko Bread Crumb.

Ginger-Garlic Eggplant with Homemade Asian Sauce

Ingredients

  • 2 medium long chinese eggplant, cut crosswise into 3/8-inch slices
  • 1 1/2 cups Kikkoman® Panko Bread crumbs
  • 1 tablespoon freshly grated ginger & garlic paste
  • 1 cup rice flour
  • Olive oil spray
  • salt & pepper
  • for the home-made Asian sauce
  • 4Tbsp Kikkoman® Soy Sauce
  • 2 tablespoon maple syrup
  • 2T sp Vinegar
  • green oinon / chopped
  • 1 teaspoon sesame seeds

Instructions

  1. Slice the eggplant ?" thick disc
  2. Spread the eggplant in a single layer on paper towels. Sprinkle both sides with salt and let sit for 10 minutes.
  3. This will draws out all excess moisture. After 10 minutes,Pat dry with a paper towel.
  4. Apply ginger & garlic paste.
  5. In a small bowl, combine the rice flour with water. mix it well
  6. In another small bowl, add panko bread crumbs ,salt & black pepper powder
  7. Preheat oven to 375 degrees with the oven rack in the middle.
  8. Take 1 slice of eggplant. Dip it in the rice flour batter so it is coated, shake off excess. Then dip it in panko bread crumbs, pressing to adhere. Then place it on the baking sheet.
  9. Repeat with all the eggplant.
  10. Spray the top of the breaded eggplant with olive oil spray, and sprinkle with sesame seeds if you like
  11. Bake in the oven for 30 minutes, turning the eggplant half way through, until crispy and golden brown.
  12. Mix all the 3 ingredients to make quick and easy Homemade Asian sauce
  13. Serve warm with our Home-made asian sauce .

These ginger-garlic eggplant fritters sounds deliciousC crunchy and flavourful and the bonus point is that these are baked.
