Guys, you are going to love this smoothie. It's super delicious and nutritious because it's full of tropical fruits and loaded with fibrous Butternut Squash (Shush!!!, that is my secret ingredient). When you try this smoothie, you wouldn't even be able to guess that Butternut Squash is one of the ingredients. It's so so tropical in taste but with the health benefits of butternut squash (all that fiber). Recipe for a nutritious smoothie is that it needs to have fruits and vegetables both. Seems like I have found the perfect blend to give it the perfect taste.

Growing up on the coast of Mumbai, I loved the tropical fruits the city had to offer. Especially the Mangoes in the Mango season. Nothing beats the Alphonso variety of Mango from India. Although I don't get to enjoy a lot of Alphonsos here in the US, I make do with what we get. Coming back to the smoothie, there are 2 things I love about this smoothie,

Need I say anything more.This powerhouse smoothie is a great way to keep your immune system in balance and prevent the common cold and reduce inflammation. Thanks to the Vitamin A & Vitamin C content. Given that it's high fiber and low fat it's can aid weight loss too. Although the carbohydrate content is high, these are good complex carbohydrates, which provide high fiber and nutritional mineral and vitamins. Honestly, I love this smoothie for its taste and its nutritional value.  A perfect way to kick-start your busy mornings. Just toss in the ingredients in a blender, a couple blitz and you are done. A glass of nutrition, ready for you. I have even made a mocktail out of this but will keep that for another day. I know I am going to be making many more variations of this.

Vegan Tropical Butternut Squash Smoothie

Yield: 2 servings (24 oz.)

Total Time: 5 minutes

Ingredients

  • 1/4 cup mango (frozen)
  • 1/4 cup pineapple chunks (frozen)
  • 1/4 cup butternut squash (frozen)
  • 8 oz. coconut water
  • 1 inch ginger root
  • 6 basil or mint leaves

Instructions

  1. Use fresh produce and freeze it in a ziplock the night before.
  2. Add all the ingredients into a blender and blend until you get a smoothie consistency. If you find the smoothie too thick, add some more coconut water to water it down.
  3. Garnish it with mint or basil leaves or even berries and enjoy.

High fiber with 14 percent DV per serving.

4 percent DV plant-based protein per serving.

59 percent DV Vitamin C per serving.

26 percent DV Vitamin A per serving.
