  • 1/4 cup Tamarind Chutney
  • 1/2 cup Nylon sev, thin
  • 2 tablespoon Cilantro leaves, chopped.
  • 2 tablespoon masala boondi for garnish, optional

Instructions

Step 1- Preparing the Potatoes

  1. Boil or Air fry the potatoes till they are perfectly soft.
  2. Mash them while they are still warm leaving a few chunky textures.
  3. Add diced onions and tomatoes.
  4. Add Salt and Red chili powder to the mix.
  5. Mix the onions, tomatoes and spices thoroughly with the mashed potatoes.

Step 2 - Assembling Your Sev Puri with Finesse

    1. Arrange the papdis / puris on a serving plate.
    2. Place a small amount of the spiced potato, onion and tomato mixture onto each puri, creating a stable base.
    3. Drizzle the green, red garlic, and tamarind chutneys generously. Each drop is a flavor bomb waiting to explode.

Step 3 - The Final Garnish

  1. Sprinkle a generous helping of fine, crispy Sev for a satisfying crunch. The delicate strands add a texture contrast that is essential in any plate of Sev Puri.
  2. Sprinkle Roasted Cumin Powder that adds a smoky, earthy aroma.
  3. Add some Chaat Masala: The quintessential Indian street food spice blend that gives an instant zing.
  4. Finish by scattering chopped fresh coriander over the top. This not only adds a pop of color but also contributes a refreshing herby note to tie all the flavors together.

The final result should look inviting, a tempting mosaic reflecting the spirit of Mumbai's street food brilliance.
