Beta-carotene is a red-orange pigment found in plants and fruits, especially carrots and colorful vegetables.The name beta-carotene comes from the Greek beta and Latin carota (carrot). It is the yellow/orange pigment that gives vegetables and fruits their rich colors.
In our bodies beta-carotene converts into vitamin A (retinol), which is very essential for good vision and eye health, strong immune systems, healthy skin and mucous membranes. Given the fact that we spend so much of our time in front of our gadgets, we need to make sure we incorporate enough beta-carotene foods in our diet.The body only converts as much vitamin A from the beta-carotene as much as it needs. Beta-carotene is an antioxidant that inhibits the oxidation of other molecules;it protects the body from free radicals. Free radicals damage cells through oxidation which can cause severe chronic illness.
I have tried to make a beta-carotene salad that incorporating yellow/orange veggies from my refrigerator. Carrots & sweet mini peppers. Chop them finely. The finer the particle size … the better the absorption of beta-carotene.
Add a healthy dressing of your choice or even mix these veggies in yogurt for a side dish.
All ingredients to be finely chopped
- 1 cup lettuce
- 1/2 cup cucumber
- 1/2 cup onions
- 1/2 cup carrots
- 1/2 cup sweet mini peppers
- cilantro for garnishing
For the dressing
- salt to taste
- pepper to taste
- 1 tsp. freshly squeezed lemon juice
- Thoroughly wash the vegetables
- Chop them as finely as you can
- Toss them all together
- Add salt, black pepper, lemon juice or a healthy dressing of your choice. I just sprinkled a little salt and lemon juice over mine.
