TikTok Green Goddess salad took over the world last summer, and we have the vegan version that will satisfy your taste buds. A simple dressing and salad greens make a great topper for your favorite tacos and sandwiches, a great dip, and can be a stand alone salad. You’ll want to make sure you get all the ingredients on your way home so you can make this tonight!

For the green goddess salad

  • 1 small cabbage head, finely chopped
  • 4 Persian cucumbers, finely chopped
  • 1 bunch of green onions, finely chopped
  • 1/4 cup chives, finely chopped (optional)

For Green Goddess Salad Dressing

  • olive oil 1/4 cup
  • lemon juice of 2
  • rice vinegar 2 tbsp
  • garlic cloves 2
  • shallow 1
  • fresh basil 1 cup
  • spinach 1 cup
  • nutritional yeast 1/3 cup
  • walnuts 1/4 cup
  • salt to taste
  • water 1/2 cup

Instructions

    Our vegan Green Goddess salad dressing does not use any mayo or anchoives, which often appear in other Green Goddess dressings. So, you won’t need to make any adjustments if you follow a vegan diet!

    Here’s what you need to do to make this really easy, Green Goddess Salad Recipe:

  1. To start, chop the cabbage, cucumbers, green onions, and chives into fine pieces. Next, add them to a large mixing or salad bowl.
  2. In a blender or food processor add in the ingredients for the sauce and then blend until smooth.
  3. Next, pour the dressing onto the chopped ingredients and mix well.
  4. Enjoy with tortilla chips, on tacos, pappadums, a side of bread, or on its own.

Notes

  • You can purchase pre-chopped cabbage to save a bit of time.
  • If you are allergic to walnuts, you can use a different type of nut or you could omit them altogether.
