- Dried pinto beans or Navy beans - 1 pound
- Pineapple juice - 1 cup
- Tomato sauce - 1 cup
- Garlic powder - 1 teaspoon
- Mustard powder - 1 teaspoon
- Salt to taste
- Onion / large minced - 1
- Maple syrup - 1/3 cup
- BBQ sauce - 1/4 cup
- Water or Vegetable stock if your beans are not pre-soaked - 2 cup
Instructions
- If using soaked beans, soak beans overnight in cold water. Drain beans and then add to inner pot of instant pot.
- Add in all the remaining ingredients, mix together and place lid on instant pot.
- Set on high pressure for 40 minutes if beans were soaked, 60 minutes if beans were not soaked.
- Let pressure release naturally and then serve.
- Serve with some brown rice, baked sweet potato, corn bread or Hawaiian rolls.
Notes
- If you don't have maple syrup, you can use brown sugar or honey.
- If you don't like chopped onions, you can add in 2 teaspoons dried onion powder.
- You can use water or apple juice in place of pineapple juice
- You can use navy beans, Jacob cattle beans or great northern beans instead of pinto beans
