Description

Lauki is a delicious traditional bottle gourd curry. This North Indian curry recipe features perfectly cooked bottle gourd in a savory onion tomato base with a gentle blend of aromatics. Making it in the Instant Pot lets you and your family enjoy this nutritious recipe any night of the week. 


Ingredients

  • 1 medium size lauki (bottle gourd) ,peeled and chopped about 1/2 inch pieces (about 3 cups)
  • 1 /2 tbsp oil or ghee
  • 2 tsp cumin seeds
  • 2 green chills / chopped
  • 1 medium onion /chopped
  • 1 large tomato / chopped
  • 2 tablespoon water
  • salt to taste
  • 1/2 tsp black pepper powder
  • 1/2 tsp turmeric powder
  • handful cilantro leaves

Instructions

  1. Wash the Bottle Gourd and peel the skin and cut into 1/2 inch pieces
  2. Press SAUTE mode on Instant Pot. when hot ,add oil or ghee in the inner pot .
  3. Add cumin seeds ,let them splutter.
  4. Add in the chopped onion and saute for 2 minutes  .
  5. Next add tomatoes ,salt,  turmeric powder and lauki/bottle gourd pieces and mix well. pour in the water and make sure to scrap of any spice if sticking to the pot.
  6. Close the lid , and turn valve from VENTING to SEALING position.
  7. Press CANCEL button on Instant Pot.
  8. Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 5 MINUTES.
  9. When done ,Do a QUICK RELEASE
  10. Open the lid . Garnish with chopped cilantro and sprinkle some black pepper powder and mix well.
  11. Lauki Ki Sabji/Bottle Gourd Curry is ready, serve with hot with roti & Dal
