Description

These mini Indian burgers, vada pav sliders are packed with flavor, super easy to make and an absolute crowd pleaser. Everyone will come back for seconds, these are simply so good!


Ingredients

Units Scale

For Potato Filling

  • 5 medium potatoes
  • 2 tbsp oil
  • 1 tsp mustard seed1/2 tsp hing (asafoetida)
  • 10 curry leaves
  • 2 green chillies chopped
  • 1 tap ginger garlic paste
  • 1/4 tap turmeric
  • Salt to taste
  • 2 tbsp fresh cilantro, chopped
  • Juice of half a lemon

 For Dry Lasun (Garlic Chutney)

  • 12 garlic cloves, peeled
  • 1 cup boondi
  • 1 tsp red chili powder
  • Salt to taste ( be mindful of the salt in boondi)

For Green Chutney

  • 2 cup freshly chopped cilantro
  • 2-3 garlic cloves, peeled
  • 1 inch ginger
  • 2-3 green chillies (adjust according to taste)
  • Salt to taste
  • 1/2 lemon juice
  • 3-4 ice cubes
  • Water 2 tbsp or as needed

Other

  • 12 Pavs
  • 12 Pepper Jack or Amul Cheese Slices
  • 1 cup shredded cheddar or mozzarella cheese
  • Butter

Instructions

  • Pressure Cook Potatoes: In the inner pot of the Instant Pot, add a cup of water. Place a trivet on it and arrange the potatoes in a single layer. Close the lid, seal and vent and pressure for 10 minutes followed by a natural pressure release. Allow them to cool and then peel and mash the potatoes.
  • Season the potatoes: Heat oil in a pan, and temper it with mustard seeds, green chilies, ginger garlic paste. Once the seeds start to crackle, add the mashed potatoes, turmeric and salt and combine the ingredients well. Add the lemon juice and chopped cilantro, mix and keep the mixture aside.
  • Prep the garlic (lasun) chutney: In a dry grinder, add boondi, garlic cloves, red chili powder & salt to taste. Grind into a coarse mixture and keep aside.
  • Prep the green chutney: In a blender, blitz together fresh cilantro, green chilies, ginger, garlic and salt along with ice cubes and water (if needed).
  • Assembly: Take a loaf of Pav and slice it into half. On the bottom half spread the green chutney, followed by the potato mixture, lasun chutney, cheese slices and optionally more shredded cheese. Place the top loaf of the pav and using a toothpick poke some wholes through out the loaf. Mix some red garlic chutney with butter and using a brush, spread the garlic butter generously on the loaf. Wrap an aluminum foil and bake in the oven at 350 F for 8-10 minutes until the cheese melts.
