For Manchurian Balls

  • 1 cup grated cabbage
  • 1 medium carrot, grated
  • 2-3 spring onions, finely chopped (greens and whites separated)
  • 1 tbsp ginger-garlic paste
  • 1 tbsp soy sauce
  • 3/4 cup all-purpose flour (maida)
  • 1/2 cup cornflour
  • Salt to taste
  • Black pepper powder to taste
  • Oil for deep frying
  • For the Gravy
  • 2 tbsp oil
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 2 green chilies, slit or chopped
  • 2 tbsp chopped spring onion whites
  • 1 tbsp soy sauce
  • 1 tbsp red chili sauce
  • 2 tbsp tomato ketchup
  • 1 tsp vinegar
  • Salt to taste
  • 1/4 tsp black pepper powder
  • 1 cup water
  • 1 tbsp cornflour + 2 tbsp water (slurry)
  • 2 tbsp chopped spring onion greens (for garnish)

Instructions

Step 1 - Make the Manchurian Balls

  1. Combine shredded cabbage, shredded carrot, chopped spring onions, ginger-garlic paste, soy sauce, salt, pepper, maida and corn flour in a bowl.
  2. Mix it all well and make small balls.
  3. Heat oil in a deep pan. And fry the balls over medium-high heat until golden and crisp. Set aside.

Step 2 A - Air Fry the Manchurian Balls

  • Heat oil in a deep pan. And fry the balls over medium-high heat until golden and crisp. Set aside.

Step 2 B - Air Fry the Manchurian Balls

  • Preheat your air fryer to 400°F .
  • Lightly spray the basket with oil and arrange the balls in a single layer.
  • Spray the tops of the balls with oil.
  • Air fry for 10–12 minutes, shaking halfway through, until they’re golden and crispy.

Step 3 - Make the Gravy

  1. Heat 2 tbsp oil in a pan. Add finely chopped garlic, ginger and spring onion whites. Sauté for 30 seconds.
  2. Then add green chilies and stir-fry for a few seconds.
  3. Throw in the soy sauce, red chili sauce, tomato ketchup, vinegar, salt and pepper. Stir well.
  4. Add 1 cup water and bring to a boil.
  5. Add the corn flour slurry and cook for 2–3 minutes to thicken the sauce.

Step 4 - Mix and Serve

  1. Now add the fried Manchurian balls into the sauce. Gently mix to coat them well.
  2. Top with chopped spring onion greens.
  3. Serve hot with noodle or fried rice.
