Bolillo Bread

Bolillo bread is a delicious variation of a baguette. With a crunchy crust and soft, fluffy center, this homemade bread has an addictive blend of textures you’ll love.

All-Purpose Flour

Instant Or Active Dry Yeast

Salt

OIl

Sugar

Water

INSTRUCTIONS

To make the dough, whisk your dry ingredients and oil in a stand mixer. Add hot water and knead with the dough hook for at least 10 minutes on low.

Proof the dough in the Instant Pot by putting the dough in the pot liner.  Leave it in the pot on yogurt setting for about 60 minutes until the dough has doubled in size.

Form dough into a flat circle and cut it into 8 equal portions. Roll into individual balls before shaping the bolillos into football shapes.  Place on cookie sheets and brush the tops with oil. Let rise for 30 more minutes.

Cut a slit across the top and brush tops with water. Bake on middle oven rack for 10 minutes at 425°F.  Lower temperature to 350°F, spray dough with water again, and bake for 10 more minutes.

When bolillos are done, they will be crusty on the outside and soft in the middle. They will also be a nice golden brown.
