Use the sauté function to sauté the onion, green onions, garlic, ginger, and chili and then give them a good stir. Cook until they become aromatic.
Add the brown rice and toast for a few seconds. Stir in water, coconut milk, all spice mix, and salt. Stir in the kidney beans and drop in the thyme springs.
After the thyme is added, pressure cook for 18 minutes followed by a natural pressure release.
Serve the rice and peas with a garnishment of green onions and thyme. Serve it warm in individual bowls.
