To prepare the Onion Tomato Paste, puree the onion, tomato and cashew in a blender or food processor. Set it aside.
Stir fry cashews, raisins and pineapple chunks in the Instant Pot for 2 minutes or until cashews are golden. Remove from pot.
Stir-fry the whole spices, Onion, Tomato and Cashew Paste, and ginger garlic paste for 2 -3 minutes.
Add the salt, turmeric powder, red chili powder and the garam masala along with the vegetables and mix well.
