Quinoa | Water  Cucumber | Parsley Mint | Red Onion Pistachios | Chickpeas Lemons | Olive Oil Sea Salt | Pepper Crumbled Feta Cheese

INGREDIENTS

Put the quinoa in a fine-mesh strainer and rinse under running water for a few minutes. Add water and rinsed quinoa in the inner pot of the instant pot.

RINSE

Set the manual/pressure cook button to 1 minute on high pressure. When time is up, open with the Natural pressure release. Fluff quinoa with a fork.

COOK

In a medium bowl, stir together cooked quinoa, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, olive oil, salt, pepper and feta.

MIX

Serve immediately or let the salad chill in the fridge a couple hours before serving.
