Description
Aloo tikki are delicious potato patties stuffed with a blend of veggies and spices. The result is a flavorful Indian version of a hash brown patty we know you’ll love! These disc shaped potato patties are an irresistible way to sneak in extra veggies to your comfort food. Our air fryer version lightens up the recipe so you can feel even better enjoying this tasty treat and feeding it to your family!
Ingredients
For Tikki
- Boiled potatoes 4, medium size
- Corn starch 1/4 cup
- Salt to taste
- 1 tbsp ghee / oil
- Oil for frying
- Cilantro for garnish
For chana dal filling
- Chana dal 1 cup, soaked
- Water 1.5 cup
- Boiled potato 1 medium size
- Green chillies chopped, 1 tbsp
- Fennel seeds, crushed 1 tbsp
- Roasted cumin powder 1 tsp
- Mango powder / amchur 1 tsp
- Red chili powder 1 tbsp
- Ginger grated 1 tbsp
- Salt ( 1/2 tsp to cook the chana dal + more as per taste)
- 4 spring of cilantro torn apart.
For Garnish
- Yogurt 1 cup
- 1 tbsp green chutney
- 1 tbsp sweet tamarind chutney
- 1 tsp chaat masala

Instructions
How to make Aloo Tikki
Before starting, we broke the directions into three sections for ease. They include:
- Making the chana dal
- Preparing the filling
- Assembling and air frying the tikki
Prepare Chana Dal in Instant Pot
- First, pour the water into the inner pot followed by the soaked chana dal and salt. Place the lid on top and then seal the vent and pressure cook for 12 minutes followed by a quick release of pressure.
- The chana dal should be almost cooked, but it should not be overcooked.
Assemble the filling
- In a large mixing bowl, first add the boiled potato and mash it. Next, add a cup of cooked chana dal. Finally, add all the remaining ingredients for the filling and then mix well and set aside.
Make the Tikkis or Patties
- In another bowl, add the potatoes. Mash them and then mix in the corn starch and salt.
- Divide the potato mash into equal portions and form them into balls.
- Next, grease your palms and flatten one ball at a time in between your palms. Use your thumb to make a well for the stuffing.
- When the well is ready, scoop 1 tablespoon of mixture into the well. Finally, seal the edges of the tikki or patty.
- Repeat the process until all the potato mixture is used.
- When the patties are ready, heat the oil in a pan to shallow fry them or follow air frying instructions below. Shallow fry on medium heat until golden brown on both sides. As they cook, make sure to press the tikkis gently with your spatula to help cook the chana dal stuffing.
- When they are done, place them on a paper towel to remove any excess oil. Serve them immediately with your favorite gravies, chutneys, sauces or pack them in a burger.
Air Fryer Instructions for Aloo Tikki
- Instead of frying the tikki, you can air fry them. To do this, set your air fryer to 180 C or 356 F and then cook for 15 to 20 minutes or until golden brown.
- Keep in mind that they will still taste great, but they will not look exactly the same and will be slightly less crunchy.
- Serve warm with yogurt, sweet chutney, green chutney , chaat masala and cilantro.

Pro tips and tricks
When you want to make the best potato patties, follow these tips and tricks:
- For added crunch, spray the potatoes with non-stick spray or oil.
- Make sure to thoroughly drain the potatoes before mashing them.
- If the potatoes seem a bit too moist, you can increase the flour a bit to help thicken them.
- Don’t overcook the chana dal.
