Description
Take one look at this delicious sandwich and you will quickly realize that this is not your traditional vegetarian sandwich. This is something special; it's called the Bombay Sandwich - Vegetable Sandwich. Loaded with sliced veggies, masala aloo( Potato) and topped with chutney and sev. This Bombay sandwich is arguably one of the best vegetarian sandwich ever. It’s super delicious, and exploding with amazing flavors and ready to rock your socks off!
Ingredients
For the Aloo Masala Filling:
- Oil - 1 tbsp
- Mustard Seeds (Rai) - 1 tsp
- Cumin Seeds (Jeera) - 1 tsp
- Curry Leaves - 8-10 leaves
- Green Chilies - 2, finely chopped
- Hing (Asafoetida) - 1/4 tsp
- Turmeric Powder - 1/2 tsp
- Garam Masala - 1 tsp
- Coriander Powder - 1 tsp
- Boiled Potatoes - 3 medium, mashed or crumbled
- Salt - to taste
- Fresh Cilantro - handful, chopped
For the Sandwich:
- Bread Slices - 6 (white or brown)
- Butter - as needed (softened, room temp)
- Green Chutney - 3-4 tbsp (mint-coriander chutney)
- Onion - 1 small, thinly sliced into rings
- Tomato - 1, thinly sliced
- Capsicum/Bell Pepper - 1, thinly sliced
- Sandwich Masala or Chaat Masala - to sprinkle
- Nylon Sev - for garnish
Instructions
Prepare the Aloo Masala

- Heat oil in a pan on medium heat.

- Add mustard seeds and let them splutter, then add cumin seeds, curry leaves, and chopped green chilies.

- Stir in hing and turmeric.

- Add the mashed potatoes along with salt, garam masala, and coriander powder. Mix well until evenly combined.

- Garnish with fresh cilantro and let it cool.
Assemble the Sandwich

- Take a slice of bread and spread softened butter evenly.

- Add a layer of green chutney.
-
- Place a few onion rings on the chutney.
-
- Spread about 2–3 tablespoons of the aloo masala mixture.

- Top with tomato and capsicum slices.
-
- Sprinkle some sandwich masala or chaat masala.

- Take another bread slice, spread butter and chutney, and place it chutney-side down to close the sandwich.
Grill It Up

- Preheat your sandwich toaster or electric grill.

- Lightly brush the outside of both bread slices with butter.

- Place the sandwich in the toaster or grill, close the lid, and cook on medium heat until golden and crispy on both sides (about 3–4 minutes).
Serve & Enjoy

- Remove the sandwich and brush with a bit more butter (optional but worth it!).

- Sprinkle a generous amount of nylon sev on top for that classic Mumbai touch.

- Slice diagonally and serve hot with green chutney, spicy garlic chutney, or ketchup.
Notes
Alternative to Stove-Top Toaster:
Using an Electric Sandwich Maker (Grill or Toastie Press)
Steps:
1. Preheat the sandwich maker for a few minutes.
2. Assemble the sandwich as usual:
3. Close the sandwich and place it in the sandwich maker.
4. Press it shut and grill for 3–5 minutes or until golden brown and crisp.
5. Carefully take it out, cut into halves or triangles, and serve hot with chutney and ketchup!
Tip: Add a little extra butter on the outside of the bread for an extra crispy crust!
Using a Regular Pan or Tawa (Stovetop Method)
Steps:
1. Assemble the sandwich the same way as above
2. Heat a non-stick pan or tawa on medium flame.
3. Add a little butter or ghee to the pan.
4. Place the sandwich in the pan and press down gently with a spatula or another flat pan for even toasting.
5. Toast for 2–3 minutes on one side until golden and crisp.
6. Flip carefully, add more butter if needed, and toast the other side the same way.
7. Once both sides are crisp and golden, remove, slice, and serve.
Don’t rush it—low to medium flame ensures the sandwich crisps up without burning!
