Description
Lapsi, a delicious and nutrient rich Indian sweet made with cracked wheat or bulgar, ghee, nuts and raisins. Traditionally served as a dessert or side but this makes a perfect whole grain breakfast that can be meal prepped ahead of time. Instant Pot Video Recipe + Stove Top option included. Can be made vegan too.
Ingredients
- 1 cup bulgar / cracked wheat (medium)
- 2 tbsp ghee / oil
- 1 cinnamon stick or 1 tsp cinnamon powder (optional)
- 4 cloves (optional)
- 4 cardamom (optional)
- 1/2 cup jaggery or palm sugar or just sugar
- 2 cups water
- 1/4 cup raisins
- 1/4 cup almonds, sliced or chopped
Instructions
Instant Pot Lapsi
Step 1: Gather the ingredients - Gather the cracked wheat or bulgar, oil or ghee, spices, almonds, raisins, water and sweetener.
Step 2: Toast the cracked wheat or bulgar - Using the saute function, heat ghee or oil in the inner pot. Once hot, throw whole spices or spice mix or a combination of both along with the cracked wheat or bulgar. Stir and toast the cracked wheat or bulgar for a minute until you get the nutty aroma.
Step 3 : Pressure Cook - Add in the sweetener, raisins and water and pressure cook for 10 minutes followed by allowing the pressure to naturally release. It's takes about 5 minutes for the pressure to build.
Step 4 : Garnish and serve warm or store it.
Stove Top Lapsi
Using a pot or a pan, follow the same recipe listed for a pressure cooker. Instead of pressure cooking, you will cook the laspi on low heat for about 10 minutes until the water evaporates and the ghee or oil oozes out.
