My introduction to Lapsi
My introduction to lapsi was the day I married my Gujarati husband - until then, I only knew it as Meetha Daliya, the warm cracked wheat breakfast my mom made UP style. Gujarati lapsi was delicious but felt too ghee-heavy for an everyday morning. So I merged both worlds, Gujarati lapsi meets Meetha Daliya - lighter, wholesome, and meal-prep friendly so you can make a big batch and eat nourishing breakfasts all week.

Lapsi Ingredients
The quantities are available in the recipe card below, this is just a gist of the ingredients.
- Cracked Wheat (Daliya or Fada) - After testing this recipe with different grades, I found that medium grade works the best for Lapsi, as fine becomes too mushy and coarse takes too long.
- Ghee or oil - I highly recommend using ghee for this recipe however if you are vegan you can use oil. I make my own ghee in Instant Pot, so I use that. Tastes so much better and is economical too.
- Sweetener - Traditionally it is sweetened with jaggery, however sometimes when I am making this as a breakfast and not dessert, I skip adding a sweetener all together. That ways diabetics can add a sweetener of their choice and still enjoy this. For festivities I add jaggery, but my son likes it with maple syrup and often time my husband and I add monk fruit or stevia. If using jaggery use a block rather than powder for deeper taste.
- Spices - Cloves, cardamom, and cinnamon really enhance the flavors. In winter I often add nutmeg & ginger powder to Lapsi. It's always yum, no matter what you add.
- Raisins - Soft bites of raisins sweeten the lapsi making you add less sugars.
- Almonds for the crunch and healthy fats
- Water - stick to 1:2 cracked wheat to water ratio for perfect texture every single time

How to make Instant Pot Lapsi step by step recipe

- Hit Saute and heat ghee in the inner pot
- Add whole spices and toast for 30 seconds until fragrant
- Add cracked wheat or bulgur and toast for 1 minute until nutty aroma hits
- Add jaggery, raisins and water, give it a quick stir
- Close the lid, set to Pressure Cook for 10 minutes
- Allow pressure to naturally release, takes about 5 minutes
- Open, garnish with sliced almonds and raisins
- Serve warm or cool completely and refrigerate for meal prep

How to make Lapsi on Stove Top?
- Heat ghee in a heavy bottomed pot or pan
- Add whole spices and toast for 30 seconds until fragrant
- Add cracked wheat, coat & toast for 1 minute until nutty aroma hits
- Add jaggery, raisins and water, stir well
- Cover and cook on low heat for 10 minutes
- Keep going until the water evaporates and ghee starts oozing out, that's your cue it's done.
- Open, garnish with sliced almonds and raisins
- Serve warm or store for later.
