Green Moong Dal -This mung bean dal hits every note for a perfect meal. It is warming and filling, creamy and chunky, spiced but not spicy.
Whole Green Mung Beans Fresh Tomatoes | Fresh Ginger Ghee | Fresh Lemon Juice Salt | Cilantro Peppercorns | Cloves Red Whole Chilies | Green Chili Cumin Seeds | Paprika Coriander Powder Turmeric Powder
Rinse and soak the green mung beans for at least 20 minutes if you have the time. Chop the tomatoes, grate the ginger, and get the spices and other ingredients ready.
Heat ghee in the Instant Pot. Temper the spices. Throw in the tomatoes, ginger and green chilies and saute for about 5 minutes. Add the green mung beans, salt and water.
Pressure cook for 15 minutes. It will take about 10 minutes for the pressure to build. Allow the pressure to naturally release. Stir and it will get nice and creamy.
Add the fresh lemon juice and garnish with cilantro. Serve with rice, flatbreads or toasted breads.
