Thoroughly rinse the rice without allowing it to absorb too much water. Add water and rice to the inner pot.
Pressure cook for 6 minutes followed by a natural pressure release. Make the rice seasoning by dissolving the salt and sugar in the vinegar.
Fluff the rice with a fork, then gently transfer to a glass or wooden bowl without breaking the rice.
Add the sushi rice seasoning and gently mix it in the rice using a wooden spoon. Sushi rice is ready to be rolled into a sushi or added to a sushi bowl.
