Thai Massaman Curry

Emphatically the king of curries - This Thai Massaman curry is a warm, comforting curry that is perfect for any night of the week. You  don’t need a lot of time or ingredients to make this a delicious treat the whole family will love.

– Oil – Ginger & Garlic – Thai Massaman Curry Paste  – Extra Firm Tofu Cubes – Carrot – Red Onion – Potato – Green Beans – Fresh Baby Corn or Canned – Canned Straw Mushrooms – Coconut Milk  – Water – Lime

INGREDIENTS

Sauté ginger, garlic, onion, chopped potato and massaman curry paste in the Instant Pot for 1 minute.

Add in all the veggies except the tofu and mushrooms. Then add coconut milk, water, and salt to taste.

Pressure cook on high for 2 minutes. Let the pressure naturally release for  5 minutes and then do a quick release.

Add the tofu, straw mushroom and some chopped cilantro, lime juice and gently mix it.   Serve it hot with jasmine rice.
