Ingredients

  • 12 ounces -Bowtie pasta
  • 1 pint- cherry tomatoes, halved.
  • ½-Thinly sliced red onion
  • 2 - small cucumbers, diced
  • 1- medium bell peppers, diced
  • ½ cup - sliced black olives.
  • ½ cup - Feta cheese.
  • ¼ cup chopped fresh basil.
  • ¼ cup chopped fresh parsley.
  • For the dressing,
  • ½ cup -Extra-virgin olive oil,
  • cup -Balsamic vinegar,
  • 2 cloves Garlic, minced.
  • 1 tsp- lemon juice
  • 1 tsp-Dried Parsley
  • 1 tsp-Dried oregano,
  • salt, and pepper to taste.

Instructions

  • Step 1 - Cooking Bowtie Pasta and chop the veggiesStart with a large pot of boiling, generously salted water.
  • Add your dry bowtie pasta and stir occasionally to prevent sticking.
  • Follow the package instructions, usually between 8-12 minutes, but start checking a couple of minutes before the recommended time.
  • Chop the bell peppers, cucumber, onion in small dice. Slice the cherry tomatoes in half. Finely chop the basil leaf.
  • Step 2- Prepare the dressing.In a small bowl or a jar with a tight-fitting lid, combine minced garlic, Balsamic vinegar, extra-virgin olive oil and lemon juice.
  • Add dried parsley, dried oregano, freshly chopped basil, salt, and freshly cracked black pepper round out the flavors.
  • Whisk or shake vigorously until the dressing is emulsified.
  • - Start by placing the cooked and cooled pasta in a large mixing bowl.
  • Gracefully toss in your rainbow of veggies – the reds and greens, of peppers, juicy cherry tomatoes, and crisp cucumber slices.
  • Layer the flavors with black olives and feta cheese.
  • Drizzle your vibrant homemade dressing over the colorful medley.
  • Mix everything until each bowtie is beautifully coated.
