  • 1 large English cucumber, finely diced
  • 2 Roma Tomatoes, finely diced
  • 1 Red Onion, finely diced
  • 1 green chili, deseeded and chopped
  • ¼ cup chopped cilantro,
  • ¼ teaspoon pink Himalayan salt
  • ½ a lemon, juice squeezed
  • ½ teaspoon roasted cumin powder optional
  • ¼ teaspoon black pepper optional

Instructions

  • Gather the ingredients, wash and chop the cucumber, onion, tomatoes, green chili and cilantro.
  • In a large bowl, combine all the chopped vegetables and herbs.
  • Add lemon juice, salt, black pepper, and cumin powder.
