Savory Vegetable Breakfast Muffins

These Savory Vegetable Muffins / Egg Bites are super easy to make. Packed with vegetables and semolina (sooji), these Savory Muffins are perfect for breakfast, kids lunchboxes or a party appetizer.

Semolina | Carrots Green Peas | Spinach Ginger Garlic Paste | Pepper Italian Seasoning | Salt Baking Powder | Green Chiles Yogurt or Vegan Yogurt Water | Oil Cottage Cheese 

INGREDIENTS

In a mixing bowl, add semolina, yogurt, vegetables, spices and oil. Add water and fold the batter in. Add more salt and spices to taste.

Grease the muffin pan with oil. Pour in the batter to the top. Sprinkle with some grated cottage cheese if desired.

Bake for about 20-25 minutes at 350° F until a toothpick comes out clean from the center of the muffin. Cool.

You can also steam these vegetable muffins in the Instant Pot. Serve with our Avocado Cilantro Sauce.
