- Slow Cooked Curried Kidney Beans - Who doesn't enjoy a slow cooked meal? We totally do. Specially if it's Kidney beans infused with Indian spices and curry. You can toss in the ingredients, go to work or run your errands and when your back your meal is ready, waiing for you. Kidney beans are an excellent source of protein and fiber.

I love the paneer stuffed potatoes curry, it's one of my favorites. I have had it in a restaurant in Jaisalmer and I never forgot its special taste. I have tried looking for recipes to make it at home but they all look so difficult...
TheBellyRulesTheMind
Joanna,
I can imagine how sometimes indian cooking can get overwhelming because of the number of ingredients we use. However this is a step by step pictorial recipe so hopefully it makes it easy for you. Let us know if you get around trying it.
Yvonne
Love these. The Husband and I are trying to get healthier and we're on theAbsDiet book menu. We're slowly getting bored of it now and looking to expand our menu. These look perfect.

The burger looks so big and beafy, is that healthy?

Glad it only looks big and beafy. It's vegetarian....made with mung, thats what makes it healthy :)
Cassandra @ Powered By BLING
I've been wanting to try jackfruit! I've never seen it in my local stores. I'm going to have to inquire to our Wegman's manager. Thanks for the tip that it's a "vegetarian chicken" - I think when I find it, I'll make some jackfruit fajitas out of it.
TheBellyRulesTheMind
Cassandra,
Have you explored your local Asian grocery store. I know they carry frozen jackfruit in Indian grocery stores. Ofcourse it's no where close to the fresh which is usually available at asian stores like H-Mart. Fajitas,i like that idea. If I land up making it before you i will let you know :)
Liz Mays
Oh I would love to try and make the naan pizza. I think that would be a great new healthy dinner for us!
TheBellyRulesTheMind
Liz,
Sure, you can't go wrong there. It's always a big hit.
Heather
I pinned this earlier today. Girl, I think I stared at those meatballs for like three minutes LOL! This looks fantastic and fun to switch it up around here (my youngest stepdaughter always wants the same things)!
TheBellyRulesTheMind
Heather,
LOL, those are 'vegeterian' meatballs, might be a good way to sneak in veggies. Let us know if you get around trying the recipe. Would love to hear your thoughts on it.
mary
I like the sound of all of these exotic meals...I have never heard of most of these foods, but they look delicious. I would like to try the Naan pizza because I think my teen would eat it.
TheBellyRulesTheMind
Mary,
A lot of these are Indian fusion recipes. So you will see a lot of curries and veggies being used. I highly recommend you try that Naan Pizza, even my toddler loves it :) Let us know your teen's verdict :)

We tend to eat a lot of pasta or Mexican food but we have been changing what we eat the last little bit to incorporate more veggies, less sugar and less meat. Which can be really hard to do when it's BBQ season!!
TheBellyRulesTheMind
Heather,
How about you try this https://thebellyrulesthemind.net2016/06/tofu-tikka/. My guess is you will love it.
Jolina - The Unlikely Baker
These are great ideas! We're most likely to try the naan pizza first because we always have naan bread on hand. It would be awesome to try something new with it. Our dinners usually consist of salad or tacos or something that's chicken so it would be awesome to try something exciting for once! :)
Nicole
Those chicken kabobs look amazing! I'm putting that on our menu for next week!
Soniya Saluja
Awesome!!!
