Spicy Thai Noodle Bowl is an awesome go-to weekday recipe

Ok, you guys.  I resisted as long as I could. I had to remake and share this Spicy Thai Noodle bowl with you all this summer!! A recipe that’s sweet, spicy and nutty, balanced with salty and spicy accents. This Instant pot Spicy Thai noodle is the perfect meal for a weekday dinner that comes together in less than 10 minutes. In addition to being so simple to make, these humble spaghetti are the perfect carrier for a homemade, quick and easy, extra peanutty Thai-inspired peanut sauce. So simple to pull together, peanut noodles are a tasty lunch or weeknight meal.

Can I use Spaghetti for making Spicy Thai Noodle?

I used spaghetti for the noodles as it works perfectly and was something I had on hand. If you want to use rice noodles you could definitely use them instead. Both my boys LOVE these noodles. They  Could eat it for breakfast, brunch, lunch, snack, and dinner.  Not kidding. You can’t beat that on a busy weeknight when you just have to get something on the table, and you want it to be fresh, homemade and most important quick.

This delicious Peanut Noodles recipe tastes so amazing with just a few simple ingredients and it even tastes better than any take out! Make this easy Thai inspired noodle for your friends and family,  you can eat right away or serve as a cold noodle salad too!

What vegetables should I add to Spicy Thai Noodles

This noodle recipe is perfect to use up whatever veggies you have on hand in the fridge – I've almost always got bell peppers and some sort of green veggie so those always go in. You can add more fresh veggies to this recipe if you’d like or your choice of veggies. Next time, I might also add some sugar snap peas. Another important thing to note about this Instant Pot Spicy Thai Noodle bowl recipe is that you don't cook the veggies in the Instant Pot on the pressure cooker setting, you throw them in afterward to sort of “steam” them.

A true One Pot / Instant Pot Noodles Recipe

Sometimes what we hate about cooking is that it just takes too much work, am I right  ...hmm This is a true one-pot recipe.  Noodles are always easy to make, but it also usually requires a pan for sauteing the veggies, a pot for noodles, and a colander for draining. One pot, and no multiple dishes to clean here. Totally my kind of recipe and I am sure you are looking for something like this too! If you like noodles, you should certainly try Vegetable Chow Mein / Lo Mein.

If you want to make this more substantial you can add tofu which will help bulk it up a bit- but with or without, I guarantee you’re going to love it!

Dinner served in about 10 minutes!

Quick and Easy Spicy Thai Noodles Bowl

Let me tell you about how easy this is! 

  1.  Add all the sauce ingredients and water in the instant pot and whisk it.
  2. Add the noodles. (I use these ), Cool
  3. Add in the veggies
  4. Mix and enjoy!

How do you spice up noodles?

In your grocery store, you'll come across several different types of "chili sauce" in the Asian section. You can up the spice level of your favorite bowl of Thai Noodles by adding hot spices like chili flakes  / Sriracha / Sambal Sauce. Also, if you're a big fan of heat, don't hesitate to double the quantity. I keep it gently spicy as both my boys love this dish and want them to enjoy it, but do make it your own! You can also add a dash of soy sauce in your cup of noodles to give the bowl the needed extra kick of salt and spice.

Spicy Peanut sauce - the key ingredient of Spicy Thai Noodle Recipe

I have to confess. I’m addicted to the peanut sauce. I’m in love. It has such a contrast of crazy flavors that work so well together. This recipe is quick, easy and outstanding

  1. Organic peanut butter 
  2. Low sodium soy sauce, but for Gluten Free use tamari. ( Regular soy sauce is too salty for me, if you use it you may want to cut down on the amount). 
  3. Garlic/Ginger
  4. Vinegar
  5. Pure maple syrup or honey
  6. & a little or a lot of Sriracha hot sauce
    Are you allergic to nuts? Substitute the peanut butter with tahini paste or Sun Butter.

Step by Step Method:

  • Add the Peanut butter, soy sauce, rice vinegar, honey, sriracha, ginger, garlic, salt, and water.
  • Give it a nice whisk to combine the sauce.
  • Divide spaghetti into two batches. Break spaghetti into half and then add to the pot. Add spaghetti to the inner pot in a criss-cross pattern: as shown in the video.
  • Using a spatula, push down on spaghetti until submerged in the liquid.
  • Close the lid.

  • Select the Manual or Pressure Cook mode and adjust the time to 5 minutes (00:05).
  • Press ‘Start’.
  • When done, quick release of the pressure (QR).
  • Open the LID carefully.
  • Add the chopped veggies and use a tong to mix it all together nicely,  place the lid back on and let sit for 5 minutes. Squeeze in the lime juice and garnish it with some green onions, chopped roasted peanuts and Enjoy!!

Instant Pot Spicy Thai Noodle Bowl -The easiest noodle 🍜🍜 recipe ever! A quick recipe for flavorful Asia inspired noodle made right in the instant pot. You can get a family favorite meal on the table even faster on busy nights! Leftovers are yummy, hot or cold! Enjoy!

Ingredients

  • 8oz spaghetti noodles
  • 1 stalk green onions/chopped
  • 4 tablespoon cilantro/ chopped roughly
  • 1/2 cup peanuts/ Roasted /roughly chopped
  • 2 Carrot/Julienne
  • 1 cup Purple cabbage/ chopped
  • 1/2 red bell pepper/ Julienne
  • 1/2 green bell pepper / Julienne
  • PEANUT SAUCE
  • 1/4 cup peanut butter/crunchy or smooth
  • 2-1/4 cup water ( use only 1/4 cup water if making it on the stove top)
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 2 tablespoon maple syrup or honey
  • 2 tablespoon Sriracha ( Add more according to your taste )
  • 1/2 fresh lime juice
  • 1-inch ginger/grated
  • 3 garlic/ minced
  • salt to taste

Instructions

INSTANT- POT 10 MINUTE SPICY THAI NOODLE BOWL

  5. Close the lid.
  6. Select the Manual or Pressure Cook mode and adjust the time to 5 minutes (00:05).

  8. When pressure cooking is complete, quick release of the pressure (QR).
  9. Open the LID carefully.
  10. add the chopped veggies and use a tong to mix it all together nicely, then place the lid back on and let sit for 5 minutes. Squeeze in the lime juice and garnish it with some green onions, chopped roasted peanuts and Enjoy!!

STOVE-TOP SPICY THAI NOODLE BOWL

  1. Cook noodles according to directions listed on the package.
  2. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.
  3. Drain Noodle and pour into a large serving bowl.
  4. Toss in the veggies and pour in the Peanut sauce toss lightly.
  5. Sprinkle with Roasted peanuts & green onion and serve.

Notes

  • Make sure you add enough water to cover the noodles and some more. If you find the noodles to be too liquidy/watery, do not worry, allow them to rest for 3 to 5 minutes, and they will absorb the extra liquid.
  • A lot of IPs are prone to showing the burn notice, especially the newer models To avoid BURN notice: Make sure that there’s nothing stuck at the bottom before you put on the lid. (You can also make the sauce beforehand in a bowl and whisk it)
  • Make sure you add enough water to cover the noodles and some more
  • You can add the veggies with spaghetti if you don't care about how firm your veggies are in this Instant -pot spicy Thai noodle bowl. It will all cook all together nicely and save you the hassle of adding the veggies later. It's really up to you.
  • Want to make it more filling? You can add your choice of protein ( Tofu ) which will help bulk it up.
  • If using Rice noodles the time and water ratio changes. 8oz rice noodles+1-1/2 cup water and 3 mins cook time.QR
  • Adjust the spice level according to your taste buds.
