Our recipe includes a variety of veggies and some seasoning to make the veggies really flavorful. And since it uses the air fryer, you can cook the veggies in half the time you would baking them in the oven.

When you make air fryer vegetables, you’ll need these ingredients:

  • Broccoli - You will want to use the broccoli crowns.
  • Cauliflower - Like the broccoli, you’ll want to use the cauliflower heads.
  • Colored Bell Peppers - When you cut them, try to make them about the same size as the florets of broccoli and cauliflower.
  • Baby Carrots - You could use regular carrots, cut to a shorter length and peeled, but that adds more work.
  • Zucchini - We cut the zucchini into half moon pieces.
  • Red Onions - When cutting, try to make them about the same size as other veggies.
  • Seasonings - We use both salt and Italian herbs seasonings.
  • Olive oil - You could use another light oil if you prefer.
  • Cooking spray - If you have a spray bottle for oil, you could use that instead.

 How to cut vegetables for air frying

When you cut veggies for the air fryer, you should keep in mind that size makes a difference. You will want to make sure the veggies are all roughly the same size in length and width. 

By cutting them to equal sizes, you can help ensure that they will cook evenly. 

Also, keep in mind size when you cut. If the veggies are larger, you will need a to add a minute or two to cooking times, but if they are smaller, you’ll need to reduce the cook time a bit.

  • In a bowl, toss the oil, herbs, and salt to combine and then coat the veggies. Keep them aside until the air fryer preheats.
  • Line the air fryer basket with parchment paper and then spray it with cooking spray.
  • Finally, layer the vegetables in the air fryer basket and air fry for 7 minutes.

Our recipe uses Italian seasonings for flavor, but you could use other seasonings based on what you are having for dinner or what you are in the mood for. Here are a few additional suggestions to get you started:

  • Southwest seasoning blend
  • Soy sauce, teriyaki, or your favorite Asian sauce and seasoning
  • Use your favorite marsala blend

Can I air fry frozen vegetables?

You can use frozen vegetables in the air fryer, but they won’t have as fresh a flavor. 

Also, you may want to defrost them first overnight in the fridge. Once defrosted, you should pat them dry with a towel to help prevent them from getting soggy. Finally, season them and fry them as described in the recipe. 

You’ll find that the frozen veggies tend to be softer, but they will still work as a tasty side dish.

How to store air fryer roasted vegetables

When you make roasted vegetables, you can easily store them in an airtight container. Before placing them in a container, allow them to cool completely and then place the container in the fridge. They should stay fresh for about 3 to 4 days.

If you like, you could freeze them instead. They should stay fresh in the freezer for up to 6 months. 

Before reheating, we recommend thawing any frozen veggies first. You can then place them in either the air fryer for a few minutes or in a preheated oven until they warm through.

  • Cauliflower 1 medium head, cut into small floters
  • Colored Bell Peppers diced (match the size of florets) 1 cup
  • Baby Carrots 12
  • Zucchini half moons, 1
  • Red Onions, diced, (match the size to other veggies) 1
  • Salt 2 tsp
  • Olive oil 2 tbsp
  • Italian herbs 1 tbsp
  • Cooking spray
