  • Chocolate - You’ll want to choose high quality chocolate. It can be milk, dark, or semisweet chips or bars.
  • Heavy Whipping Cream - There is no great substitution for this. If you wanted to make it vegan, you could try this with coconut cream or a similar fatty milk-alternative, but it will likely create a different taste.
  • Vanilla extract - You can use either pure or imitation.
  • Dip-ables - For dipping, we like to use strawberries, sliced bananas, sliced apples, grapes, blueberries, pretzel sticks, marshmallows, cookies, wafers, and brownies.

First, add three cups of water to the inner pot of the Instant pot.

Next, place a glass bowl that fits on top of the Instant Pot liner so that it sticks out the top of the liner. If your glass bowl is small and fits into the Instant Pot Liner, use a trivet to place the glass bowl on top.

Once the bowl is in place, add the chocolate and  heavy whipping cream to the bowl.

Next, turn on sauté mode, occasionally stir the ingredients gently for about 12 minutes or until the fondue is smooth.

Cancel the sauté function and then press the keep warm button.

Finally, stir in the vanilla extract and then either transfer to a dipping bowl or serve with dip-ables directly in the Instant Pot.

Pro tips and tricks

When making chocolate fondue, you’ll want to follow these tips and tricks to ensure the best results:

  • If your bowl sits on the trivet, make sure the water does not touch the bottom. If the water hits the bottom of the bowl, it can burn the chocolate as it boils.
  • To keep it warm, leave the bowl in the Instant Pot and set the pot to warm.
  • Make sure you use high quality chocolate for the fondue, it tends to melt better and have a richer flavor and thicker texture.

To thicken chocolate fondue if it is too thin, don’t worry! You can add a cornstarch whipping cream slurry after the chocolate is melted and you’ve removed it from the heat. 

To do it, just whisk together cornstarch and heavy cream and then stir it into the fondue. Then, keep whisking as the mixture heats and thickens.

If you don’t have cornstarch on hand, you could try adding a bit more chocolate or letting the fondue cool slightly.

How do you keep chocolate fondue from hardening? 

The key to keeping the fondue from hardening is keeping it warm. For best results, you want to keep it warm but not hot.

To do that, keep the fondue in a metal or glass bowl set tightly over a bowl of warm water.

It will last 3 to 4 days in the fridge. You can also freeze it for up to a month in a freezer safe container.
