What is the difference between cream of tomato soup and tomato soup?

Tomato soup and cream of tomato soup share a lot in common. They both use tomatoes as a base for the soup. You can add herbs and spices to each. And they are great for cool days when you want something warm to eat.

The main difference between cream of tomato soup and tomato soup is cream. To finish this recipe, you need table cream, light cream, half and half, or another creamy dairy substitute. 

Ingredients to make creamy tomato soup

Homemade Cream of Tomato Soup Ingredients

When you want to make this cream of tomato soup recipe, here’s what you’ll need to have on hand:

  • Butter - You could use olive oil if you prefer.
  • Yellow onion 
  • Garlic 
  • Tomatoes on the vine - If you can’t find these, plum tomatoes can also work.
  • Tomato Puree - You can use your preferred brand.
  • Italian Herb Mix - You can use your preferred brand.
  • Vegetable broth - You could use water instead, but the broth adds a bit more flavor.
  • Salt - If you prefer, you can omit since the vegetable broth has salt as well.
  • Sugar - You could use a sugar substitute if you prefer.
  • Table cream - If you don’t have table cream, heavy cream, light cream, half and half, or potentially whole milk could work. You may also have success with a neutral non-dairy milk if you want to make this vegan.

For garnish on each bowl, we recommend also having:

  • More table cream
  • Freshly cut chives or parsley
  • Cracked red pepper 
  • Croutons

And finally, we recommend pairing with fresh homemade ciabatta slices, homemade dinner rolls, these homemade Olive Garden breadsticks, or your favorite bread.

How to make Cream of Tomato Soup    

First, grab down your Instant Pot and turn on the Saute function. Once it gets hot, melt the butter or heat the oil in the inner pot. 

When the butter melts, add the onions and garlic and then sauté until they soften. Next, add the tomatoes, tomato puree, Italian  herbs, salt, sugar, and broth or water

Finally, give it all a stir before closing the lid. With the lid in place, set the seal to closed and then pressure cook for 8 minutes followed by a natural pressure release.

Once the pressure releases and the pin drops, open the lid carefully and use an immersion blender to blend until smooth. If you don’t have an immersion blender, you can carefully pour the soup into a high power blender, mix until smooth, and then pour back into the Instant Pot when ready.

When the soup has a smooth consistency, pour in the table cream or vegan cream. Next, turn on the sauté function and bring the soup to boil, stirring occasionally.

Once the soup thickens to your liking, pour it into bowls and then garnish with table cream, chives or fresh parsley, red pepper flakes, and crotons. Serve immediately.

When you make this recipe, try following these tips and tricks to help it turn out great every time:

  • Use an immersion blender to puree the cooked soup. When you use an immersion blender, you can help reduce spills and chances of accidental burns.
  • For a chunkier soup, don’t puree the cooked soup for as long, just give it a few good blends to break up any large chunks.

How do you make fresh cream of tomato soup without curdling?

There are a couple of ways to prevent the cream from curdling.

The first is to add a small amount of baking soda to the soup. Baking soda neutralizes the tomatoes’ acidity which can both reduce the acidic taste and prevent curdling.

Another way to prevent curdling is to heat up the cream in a separate pot before adding it to the soup. This helps prevent it from getting shocked when added to the soup. Heat the cream over low heat and stir occasionally to help prevent burning. 

I've never had any issued with the cream curdling as I make sure I stir the soup while adding the cream.

How do you thicken vegetarian cream of tomato soup?

Our cream of recipe uses two methods to help thicken the soup.

The first is to puree the soup once it is done in the pressure cooker. This helps add natural thickeners into the soup.

The second way is adding cream and reducing the soup a bit. The cream and slight reduction of liquid helps to thicken the soup.

What goes with homemade cream of tomato soup?

We love to garnish the soup with fresh greens, herbs, and croutons. For fresh herbs, we use either chives or parsley. For a bit of heat, we crush black or red pepper on top. Then you can add your favorite croutons to the top.

You could also experiment with topping the soup with some cheese. Parmesan or Romano cheeses could both work well as a cheesy topping.

You can store this two ways.

First, you can ladle or pour it into an airtight container and place in the fridge for about 3 to 5 days.

The second option is to pour the soup into a freezer safe container and then place it in the freezer. It should last for about 6 months in the freezer.

Does this homemade cream of tomato soup recipe freeze well?

Yes! You can easily freeze this soup and have a couple of options too!

First, you can freeze the base of the soup before adding the cream. If you do this, you will need to thaw and then bring the base to a boil after adding in the cream. Once thickened, you can serve it.

Or you could store leftover soup in the freezer too. To do this, just pour or ladle it into a freezer safe bowl and place in the freezer for up to 6 months.

How long will this creamy tomato soup recipe last in the refrigerator?

This cream of tomato soup will last about 3 to 5 days in the fridge in an airtight container. You can easily reheat in the microwave in individual bowls or on the stove top over medium-low heat.

To store for a bit longer, you can skip adding the cream at the end and pour the base into an airtight container. It should last about 5 to 7 days without the cream. When you serve it, make sure to bring the soup and cream to a boil to thicken it.

  • Sugar 1 teaspoon
  • Table cream or vegan cream 1 cup

  • Cracked red pepper ½ teaspoon
  • 3 crotons, toasted and crunchy
