OMG!!! I have been waiting eagerly to share this Rainbow Thai Spiralized Salad with you all. Trust me of all the Thai Salads I have made or tried, this one definitely tops the list. It's the most delicious salad I have ever had, be it at home or at a restaurant. It's just too good to not fall in love with it. I guess the ingredients definitely set this salad apart with the flavors. Not only is it flavorful, but it's full of colors with the perfect texture and crunch. Dress it up with our favorite Asian Peanut Sauce (vegan option in recipe card below) and enjoy the bust of flavors in your mouth. I am literally slurping as I write this.

Good thing that it's a super healthy salad. It's only loaded with the good stuff. It's raw, vegan, gluten-free & dairy-free. Lots of colorful fruits and vegetable noodles, fresh herbs, peanuts and ofcourse our Asian Peanut Sauce (vegan option in recipe card below). A perfect way to celebrate spring and enjoy a healthy meal in a bowl. Off late it's not just my weeknight meal or a quick lunch but I love serving it to my guests when I have friends and family over. So far it's been a hit and folks have been super impressed. For some, just the fact that spiralized makes them want to try this salad. For others, the tropical fruits entice them. Some can't wait to feel the texture and get the juices flowing merely with this combination. There is something in this salad to entice everyone to try it and then enjoy it.

Honestly, when I assembled this salad I didn't have the heart to mix it all up and take the first bite. I just wanted it to look perfect. I wanted to ingredients to stand out. So I spiralized my vegetables and stored them in separate containers. Just assembled the salad bowl, exactly like this and serve it to my guests. Folks thought I put a lot of time and effort into it, but thanks for my Ninja Intelli-Sense Kitchen System with Autospiralizer that this comes together so easily. I can never get bored or tired of Spiralizing. I have started spiralizing so much more and made some really interesting recipes.

Remember that post on Facebook where we asked you guys to help us plan our editorial calendar with recipes you would like us to make. Since a lot of you were looking to celebrate spring with colorful recipes using lots of fruits and vegetables, I came up with this salad. I had all the ingredients in the house and it came together so quickly and easily. I was so tempted to post one of these pictures on that post in the evening, but I was controlling myself as we already have a few other posts lined up. So glad I was finally able to share it with you all.

Rainbow Thai Spiralized Salad with Mango & Papaya & Vegetable Noodles

What I love about this salad is that it is made with simple ingredients easily available at home, but still looks so appetizing. Merely spiralizing carrots and cucumbers contribute to the crunchy vegetable noodles. You can use any fruits you have, however mangoes and papaya definitely give it that tropical twist. I love mangoes so I think adding mangoes to anything definitely enhances the taste. However what gives the flavors to the salad is the Peanut Sauce (vegan option in recipe card below) and lots of fresh herbs. Don't skimp on the herbs, especially Basil. When you combine Peanut Sauce, herbs and the fresh produce, you've got a perfect Salad recipe. you can't go wrong with this one. Try it yourself.

Rainbow Thai Spiralized Salad with Mango & Papaya & Vegetable Noodles

Rainbow Thai Spiralized Salad (V+GF)

Ingredients

  • 2 carrots, spiralized
  • 1 cucumber, spiralized
  • 1/4 papaya, spiralized
  • 1/8 purple cabbage, shredded
  • 1 mango, diced
  • 2 tablespoon peanuts, crushed
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon green onions, chopped
  • 2 tablespoon basil, chopped
  • 2 tablespoon 5 minute asian penut sauce or

Vegan Peanut Sauce

Instructions

  1. Spiralize carrots, cucumbers and papaya using a spiralizer. I used our Ninja Intelli-Sense Kitchen System with Autospiralizer.
  2. To assemble the salad, add all the fruits and veggie noodles into a bowl.
  3. Garnish it with herbs and crushed peanuts.
  4. Lastly, dress it up with either the asian peanut sauce or the Vegan Peanut Sauce (mix all the ingredients for this sauce in a bowl and the sauce is ready).
  5. If you are making this for a party, spiralize the cucumbers and keep them in a separate bowl, as they tend to leave water. For the party add the cucumbers to the salad bowl in the end. Garnish with herbs and crushed peanuts, let the guests garnish it with the dressing. Serve it cold.

I have always loved Thai salads because not only are they vibrant, colourful and fun to loo at but they are also healthy and delicious! I love the sound of your spiralized salad that is definitely a new one for me to explore :)

Those salads look very colourful and delicious. However, I don't know if I would like to try it. I don't like mixing up sweet and sour together.
