Navratan Korma is a creamy and delicious Indian Mughlai vegetable dish. Traditionally navratan korma recipes are chock full of many different flavors and textures from a variety of veggies, nuts, and fruits. This dish is very popular in North India and often is made for festivals and special occasions.

Full of sweet fruit flavors like pineapple and raisins that most kids love, this recipe will get veggies into the most veggie hating kid out there.

How to make Navratan Korma

Making this flavorful, creamy mixed vegetable curry recipe has never been easier thanks to the Instant Pot. 

  • Before you get started in the Instant Pot, prepare your onion tomato paste. Add the onion, tomato and cashew into a blender or food processor and puree or pulse the ingredients together until smooth. Then set it aside.
  • Now, turn the Instant Pot on by pushing the Saute button. Make sure the inner liner is in the Pot and then add the ghee, cashews and fruit to the pot. Stir-fry these ingredients together on saute mode until the cashews turn golden. This takes about 2 minutes. Once the cashews are golden, remove the cashews, pineapple and raisins from the pot and set aside.

  • Next add more ghee to the pot. Then add in the whole spices and the paste you made earlier. Stir-fry for 2 -3 minutes until the paste and spice gets beautifully fragrant. Add the salt, turmeric powder, red chilli powder, masala and the vegetables to the pot. Mix it well. Now, just pour in the coconut milk and water and give it a stir.

  • Let everything come to a boil and then place the lid on the Instant Pot and close the pressure valve. Pressure cook for 1 minute at high pressure. When the pot beeps, quick release any remaining pressure. Then remove the lid and add in the dried fenugreek leaves and roasted cashews, golden raisins and pineapple and stir it well. Serve it on its own or with rice or naan.

PRO TIPS TO MAKE Navratan Korma

  • Make sure you cut the vegetables into roughly equal sizes.
  • Don’t cut the vegetables smaller than inch or inch and a half sized pieces or they will get mushy.
  • Only pressure cook for 1 minute. If your vegetables aren’t done enough, you can turn the pot back on sauté mode and give them a quick sauté at the end of the cooking process.

HOW CAN I MAKE NAVRATAN KORMA ON THE STOVETOP?

Don’t have an Instant Pot? You can still make this navratan korma on the stove top. To do so, put the sauce together in a large saucepan over medium heat. Before you add the vegetables to the sauce boil or steam your vegetables so they are cooked first.

HOW CAN I MAKE NAVRATAN KORMA SPICY?

This Vegetable navratan korma dish is not spicy as the recipe is written. However, if you want to add a little heat, you could add a chopped jalapeno pepper or another chopped chili pepper to your mix of vegetables.

CAN I MAKE NAVRATAN KORMA VEGAN? 

Yes. While traditionally this recipe uses cream or yogurt in the sauce, this vegetable navratan korma recipe uses coconut milk. You can Skip the Ghee for your choice of oil.

WHAT VEGETABLES ARE IN NAVRATAN KORMA?

Traditionally, navratan korma has a blend of 9 different vegetables as the name of this dish means 9 gems. You don’t have to use 9 different vegetables if you don’t want to but use your favorite mix of vegetables. I like to add:

  • Cauliflower
  • Carrots
  • Potatoes
  • Peas
  • Green beans

CAN I SUBSTITUTE DIFFERENT VEGETABLES?

Yes! You can add any vegetables you like and omit any you don’t like. You might enjoy adding veggies like

  • Broccoli
  • Radish
  • Edamame
  • Bell peppers
  • Paneer or tofu
  • Corn
  • Baby corn
  • Zucchini
  • Sweet potato

Whatever veggies you like!

CAN I USE FROZEN VEGETABLES?

You can use a mix of fresh and frozen vegetables if you prefer. However, I would strongly encourage you not to use only frozen vegetables in this vegetable curry.

CAN I MAKE NAVRATAN KORMA NUT FREE?

I don’t recommend making this recipe without the cashews in the paste. If you have a nut allergy, you can skip it or try substituting poppy seeds for the cashews in the paste mixture and omitting the extra cashews. 

HOW LONG WILL THIS NAVRATAN KORMA KEEP IN THE FRIDGE?

This curry will keep in the fridge for about 3 days. I store any extras in airtight containers. And like most curries, this navratan korma is even more delicious the next day!

WHAT TO SERVE WITH NAVRATAN KORMA

If you have some guests coming over for a get-together and you want to treat them with something delicious as well as healthy, then this easy Navratan Korma recipe is the perfect option to go for such unplanned occasions. Navratan Korma is a delicious mixed vegetable curry dish loaded with veggies, nuts and fruits. This recipe for Instant Pot Navratan Korma creates an awesome curry loaded with layers of flavors in a creamy curry your family will love. 

Ingredients

  • 1/2 tablespoon ghee
  • ¼ cup cashews
  • 1 cup chopped pineapple
  • ¼ cup golden raisins

For Onion Tomato cashew paste

  • 1 onion, roughly chopped
  • 1/4 cup cashew
  • 1 tomato, chopped

For Navratan Korma

  • 6 cups chopped vegetables (peas, carrots ,green beans, cauliflower, potato)
  • 2 teaspoon ginger and garlic paste
  • 1 Bay leaf
  • Cardamom - 2
  • Cilantro, garnish
  • 1 teaspoon red chill powder
  • salt to taste
  • 1 tsp turmeric powder
  • 1/2 cup water
  • 1 tsp garam masala
  • 1 cup  full-fat coconut milk
  • 1/2 teaspoon dried fenugreek

Instructions

    1. To prepare the onion tomato paste, add the onion, tomato and cashew into  a blender or food processor and puree until smooth. Keep it aside.
    2. Press the sauté button, add 1 teaspoon ghee, cashews and golden raisins and pineapple chunks to the pot. Stir-fry  for 2 minutes until the cashews turn golden. Remove the cashews , pineapple and raisins from the pot and set aside.
    3. Pour the remaining ghee to the pot. Add in the whole spices , onion , tomato and cashew paste and ginger garlic paste and stir-fry for 2 -3 minutes.
    4. Add the salt, turmeric powder, red chill powder and the garam masala along with the vegetables and mix well.
    5. Next add in the coconut milk and water and give it a stir, place the  lid and close the pressure valve .
    6. Pressure cook for 1 minute at high pressure.
    7. Open the valve to quick release any remaining pressure.
    8. Add in the dried fenugreek leaves and the roasted cashews, golden raisins and pineapple and stir it well. 
    9. Serve it with Rice/ Naan

Notes

TIPS AND PRO TRICKS TO MAKE MIXED VEGETABLE CURRY / Navratan Korma

  • Make sure you cut the vegetables into roughly equal sizes.
  • Don’t cut the vegetables smaller than inch or inch and a half sized pieces or they will get mushy.

I have made this a few times - half the time it turns out well, the other half it burns at the base and doesn't cook! Any idea why this could happen?

Hi Natasha, thanks for making our recipe and sharing your feedback with us.. the reason could be lack of water or different brands of coconut milk. .. we would suggest to add 1/ cup addition water. So you don't get burn notice. Just sauté for addition few minutes after the pressure cook. Hope this helps.
