A SECRET INGREDIENT TO MAKE RICH FUDGY EGGLESS BROWNIES

These eggless brownies are so rich and decadent. The recipe definitely results in brownies that have a fudgy texture and less of a cake like texture. Between the cooking method and the secret ingredient, these easy brownies from scratch are the fudgiest brownies you will ever taste.

INGREDIENTS FOR EGGLESS INSTANT POT BROWNIES

We carefully chose each ingredient in this recipe to work together to create a brownie recipe perfect for any special day. Let’s break the ingredients down:

 

  • Flour- Flour gives the brownies some texture. This recipe only uses one cup of flour. More flour results in a cakier brownie. 
  • Cocoa powder- A good quality cocoa powder acts both to give the brownies more texture and to give them their signature chocolaty taste.
  • Butter- Every good brownie recipe needs a fat. The fat creates a perfectly tender brownie. Butter also reacts with the baking powder to create a little more lift in the brownies. Unsalted butter works best here. Make sure the butter is softened or melted.
  • Baking powder- Baking powder gives the brownies lift to help them rise slightly.
  • Salt- A pinch of salt balances the sweetness from the chocolate and sugar.
  • Instant coffee- A little bit of instant coffee really highlights the flavor of the chocolate.
  • Yogurt- Yogurt is the all star secret ingredient that creates the richest brownie ever. Make sure you are using full fat plain yogurt for the best results.
  • Vanilla- Vanilla extract also compliments the delicious chocolate flavor and adds extra richness.
  • Water- Water binds the recipe together. Only use enough water to create a batter that is similar to the texture of condensed milk.
  • Chocolate chips or chopped chocolate- The chocolate chips will melt on top of the brownies and create a gooey chocolaty topping.
  • Nuts- Chopped mix nuts are optional of course but adding them gives the brownies a little texture.

HOW TO MAKE BROWNIES FROM SCRATCH IN AN INSTANT POT 

Making delicious decadent homemade brownies from scratch been easier thanks to the Instant Pot. 

Start by sifting the flour, cocoa powder, sugar, baking powder and salt together in a bowl. In a separate bowl, whisk the melted butter, yogurt and vanilla together until well blended. Then add dry ingredients to the wet ingredients in batches, stirring as you go. Add water in batches till you get a condensed milk-like consistency. To finish the batter, stir in the instant coffee.

Grease the tray and dust it with cocoa powder .Spread batter evenly in a prepared pan. If you are adding nuts, sprinkle them on top of the batter with the chocolate chips. Cover the pan tightly with foil.

Now set up your Instant Pot by adding 1 cup of water to the inner pot of the Instant Pot. Place the trivet in the pot and set your pan of brownies on the trivet. Close the lid. Press the cake button and let cook for 25 minutes. When the pot beeps, do a natural release.

To cut the brownies neatly, let them set in the fridge for at least 2 hours first.

TIPS AND PRO TRICKS TO MAKE HOMEMADE BROWNIES IN THE INSTANT POT

  • Don’t over mix the brownie batter. It may still have some clumps in it, but that’s ok.
  • Using a spatula instead of a whisk or mixer will help keep you from over mixing the brownies.
  • Make sure you cover your pan with aluminum foil to help the brownies achieve the best texture.
  • Choose the right pan to bake your brownies in. A light metal pan or glass pan will work better than a dark metal pan and help you avoid overcooked edges.
  • To cut the brownies neatly, let them set in the fridge for at least 2 hours first.

HOW CAN I MAKE BROWNIES FROM SCRATCH IN THE OVEN?

To make this brownie recipe in an oven, follow the instructions above. Add the batter to a metal pan and bake in a 350 degree oven. The cook time will vary based on pan size and type. 

WHAT SIZE PAN SHOULD I USE FOR INSTANT POT BROWNIES?

Chances are, you are going to have to use a smaller pan than you would use in the oven. This batter makes 2 batches of brownies in this Pyrex  3-Cup Rectangle Food Storage . Or 1 spring form pan this will fit in a 6qt or 8qt instant pot.

CAN I MAKE THESE BROWNIES VEGAN?

  • To make this brownies vegan, you will need to omit the yogurt. You could try substituting applesauce in place of the yogurt.
  • You also need to substitute the butter for oil. However, because butter reacts with baking powder and oil doesn’t this will change the texture of these brownies.
  • Lastly, you will have to make sure you are using vegan chocolate chips.

CAN I MAKE THESE BROWNIES NUT FREE? 

Yes. Just omit the nuts from the recipe.

HOW CAN I KEEP THE BROWNIES SOFT?

There are a few ways to keep these eggless Instant Pot brownies tender:

  • Make sure you use a light colored baking pan to make your brownies. A darker colored pan is more likely to overcook the brownie edges. 
  • Don’t over mix the batter. Over-mixed brownies tend to be dense and hard.
  • Avoid overcooking them in the Instant Pot.

HOW CAN I SOFTEN HARD BROWNIES?

Popping a brownie that has hardened into the microwave for about 30 seconds should do the trick.

HOW LONG DO THESE BROWNIES LAST IN THE FRIDGE?

Cut brownies will last 4 days in the fridge if stored in an airtight container. Brownies taste the best if eaten within the first 2 days.

CAN I FREEZE BROWNIES?

Yes. To freeze the brownies, let them cool completely. Do not cut them into individual portions. Wrap them tightly in plastic wrap and then wrap them again in foil. You can freeze them for up to 3 months.

CAN I USE GLASS CONTAINERS IN AN INSTANT POT?

I recommend using Pyrex  3-Cup Rectangle Food Storage for these Instant Pot brownies.

Ingredients

  • Ingredients
  • Flour - 1 cup 
  • Cocoa powder- 1/4 cup
  • Baking powder- 2 teaspoon
  • Sugar- 3/4 cup
  • Unsalted Butter , soft or melted at room temperature - 1/2 cup
  • Water -3/4 cup
  • Salt- 1/2 tsp
  • Instant coffee - 1 tbsp
  • Yogurt-1/2 cup
  • Vanilla extract-1 tsp
  • Mix nuts/ optional -1/4 cup
  • Chopped chocolate or choco chips/optional 1/4 cup

Instructions

    1. Sift flour, cocoa powder, sugar, baking powder and salt together.
    2. In a separate bowl, whisk butter, yogurt and vanilla together until well blended.
    3. Add dry ingredients to the wet ingredients and stir. Pour water in batches till you get a thick pancake like consistency. 
    4. Add the instant coffee. Give it a stir.
    5. Spread batter evenly in prepared  pan, add the desired nuts, and chocolate and  cover it with a foil . This batter makes 2 pyrex  3-Cup Rectangle Food Storage
    6. Add 1 cup of water in the inner pot of the instant pot. Keep the pan on the trivet and close the lid.
    7. Press cake button and  for 25 minutes. When done let the pressure release naturally . 
    8. Let it cool in a refrigerator for at least 2 hours  before slicing. You will get neat slices then.
    9. Enjoy it warm with a scoop of vanilla ice-cream and chocolate sauce

    11. Spread the batter evenly in the prepared container and bake it for 35 minutes. A skewer inserted in the middle of the brownie will come out clean.Let it cool down at least for 2 hours before slicing. You will get neat slices then.
    12. Enjoy it warm with a scoop of vanilla ice-cream and chocolate sauce

Notes

  • If you are using sweetened yogurt in this recipe use ( 1/2 cup).

Followed exact recipe. Used almond flour. It didn't solidify at all. Both inIP as well as oven. Did anybody follow this recipe and get it right?

Hi Mama, this is not a gluten-free brownies and it's not made with almond flour. We have made it with whole wheat flour or All purpose flour.

Hi, I do not have a cake setting on my Instant Pot. I would like to see how it turns out in the instant pot. What other settings can i use ? I ended up baking it and it came out well. Thanks!

Hi Priya, If you do not have a cake setting on your IP you can pressure cook for the same time and do a natural release. Do try and share your feedback with us .
