Did we just skip spring? At least here in NC, it seems like we barely had a week of spring and it's hot already. The last few days were like 92 degrees F. I mean, come on I didn't even do my favorite springtime activity - Berry Picking. I love going to the farms and picking berries, getting dirty and enjoying some fresh air and farm fun. Honestly, I am looking forward to go on a berry-picking farm soon. That being said, doesn't mean I am not enjoying the seasonal berries, especially raspberries. So on crazy weekday mornings, I beat the heat with a good ol' smoothie. You know I love smoothies. Another addition to TBRTM smoothie list is a delicious Vegan Raspberry Almond Butter Smoothie Bowl with some seasonal raspberries and my new find at Walmart, the Maranatha Creamy No Stir Almond Butter. Yum yum!!!

You know that I love smoothies right? (From here).Guess what, as I am writing this post, it's raining outside. Seems like my complaint was heard and we will have thunderstorms for the rest of the week. Well, at least the temperature will cool down. So coming back to the Vegan Raspberry Almond Butter Smoothie, it's a great way to kickstart your day with a sweet delicious treat. It's ready in a jiffy, just toss the ingredients in a blender, a couple blitz and you're done. Breakfast can't get easier than that. Smoothies are a great way to enjoy seasonal fruits and veggies. Vegan Raspberry Almond Butter Smoothie Bowl
This Vegan Raspberry Almond Butter Smoothie Bowl is a perfect way to kickstart a busy morning. Loaded with nutrition and full of flavors, it's ready in just 5 minutes.
Ingredients
For the smoothie bowl
- 1 cup frozen raspberries
- 1/2 cup milk of your choice (I used Almond Milk)
- 2 dates
- 1 tablespoon Maranatha creamy no stir almond butter
For toppings
- 1 tablespoon pistachios
- 1 tablespoon almond butter
- handful frozen raspberries
Instructions
- If you are using fresh Raspberries, freeze them ahead of time, preferably the night before.
- In a blender add the frozen raspberries, milk of your choice, dates and almond butter.
- Give it a couple blitz until you get a smooth texture.
- Pour it into a bowl or a jar and garnish it with toppings like nuts, seeds, dried fruits, coconut, edible flowers, nut butters.
- If you have left over smoothie, pour into a popsicle mold and make some breakfast or snack popsicles.
