What Is Ginger?

Store the crystallized ginger in an airtight container in a dark, cool place. This helps it to last for several months.

Crystallized Ginger / Candied Ginger Recipe
Ingredients
- 2 cup fresh ginger
- 4 cups water
- 1 cup sugar
Instructions
- Place medium sauce pan with water and sugar on the stove . Bring to a boil to dissolve the sugar.
- Add ginger to the sugar water and simmer on low heat for 1-1 ½ hours you can cut in small cubes, juliennes, or round slices. Remove from heat and strain.
- Carefully move the ginger to a rack and sprinkle with sugar. Let them dry for few hours in a cool dry place, turning them halfway through.
- Store in a sealed container.Reserved ginger syrup liquid can be used in Tea..cake,waffle..
- Store in airtight container in refrigerator

Okay, I have boiled and boiled and boiled some more my ginger pieces and they just haven’t reached the texture of crystallized ginger I have bought in the past. I am not sure what else to do? After 2 days of cooking I finally gave up, dried and coated with sugar. What’s crazy is after all this cooking to me, the ginger is still a bit too potent. Do u have any suggestions of what to do?

If you are slicing it thinly then no you don't have to peel. Wash and scrub the ginger and use. If cutting them in small cubes then yes peel it.
