(pronounced as Mutter, for peas). It's a staple cooked in every Indian household simply because of the ease or preparation and how delicious this preparation turns out to be. Pair it with a flatbread like roti or naan and it's a complete meal in itself. It's merely potatoes and peas cooked in an onion-tomato sauce with some spices.

Aloo Matar Ingredients
- Aloo (potatoes)
- Matar (green peas)
- Onions
- Tomatoes or Tomato Sauce - Nothing beats the flavors from freshly pureed tomato, however if you don't have enough tomatoes on hand you can use a canned tomato sauce.
- Ginger
- Spices - asafoetida, cumin seeds, turmeric, chili powder, garam masala, coriander powder. If you have them all handy, use them all or use whatever is readily available.
- Oil
- Salt
- Water
- Cilantro
How to make Instant Pot Aloo Matar?
Here is just a gist of the method involved in making Instant Pot Aloo Matar. Measurements and full recipe are available at the bottom of the post in the recipe card. You can also see the video recipe to understand the procedure.
Step 1 : Prepare the ingredients
- Potatoes - Wash and peel the potatoes. Cut wedges by cutting each potato in half lengthways, then cut each half in lengthways again, until you have 4-8 wedges. The number of wedges will depend on the size of the potatoes. I have used medium sized potatoes which yield 8 wedges from each potato.
- Rinse the peas. Fresh or frozen any would do.
- Peel and finely dice the onions.
- Puree fresh tomatoes.
- Grate the ginger
- Gather the asafoetida, cumin seeds, salt, water and oil. Mix the turmeric powder, coriander powder, chili powder or paprika, garam masala in a small bowl and keep it ready.
- Finely chop cilantro to garnish
Step 2 : Saute
- Using the Saute function, heat oil in the pot.
- Once the oil is hot temper it with asafoetida and cumin seeds.
- Once the seeds start spluttering throw in the onions and saute until they change their color.
- Add the rest of the spices and and stir for a minute.
- Throw in the fresh tomato puree or tomato sauce along with ginger. Stir and continue to saute for about 10 minutes until you see the oil starting to separate from the onions and tomatoes.
- Add the potato wedges and peas and give it another stir.
- Add water and stir thoroughly, scraping off any food particles stuck at the bottom of the pot.
Step 3 : Pressure Cook
- Cover the lid, seal the vent and pressure on high for 8 minutes followed by a quickly release the pressure.
Garnish with cilantro and serve it warm.

I don't want to saute. Can I just dump and push start this Aloo Matar in my Instant Pot?
Yes you could always do that, however it won't do justice to the flavors of this Aloo Matar recipe. The process of cooking the onions, tomatoes and spices in the oil is what yield the flavors. However I understand that sometimes time is crunched you have don't have the extra 15 minutes to saute, so here is what you can do instead.
Temper all the spices in the beginning itself so the spices are cooked in oil. Then throw in the onions, tomatoes, potatoes, peas and water and pressure cook for the same time.
How to make Aloo Matar on stove top?
If making Aloo Matar on a stove top pot or a pan. Follow the same procedure as above expect that your cover the pot lid and cook on low - medium heat for about 10-15 minutes, giving it a frequent stir.
Is using a traditional stove top pressure cooker then pressure cook for upto 3 whistles on medium heat.
Can I use a pre - made tomato-onion masala?
Yes, often times I make a large batch of the onion-tomato masala and store it. It's reduces the saute time and makes life a lot more easier. Then all you have to do is just dunp the ingredients and pressure cook. 1/2 a cup of the onion -tomato masala is all you need for this Instant Pot Aloo Matar recipe.
Can I use store bought tomato sauce?
Yes, just incase if you don't have fresh tomatoes at home you can always use 1/4th cup of tomato sauce for this recipe. If using tomato paste then dilute 1 tablespoon of paste with remaining water to make 1/4 cup.
