- Brown sugar
- Vanilla extra
- Unbleached all purpose flour or bread flour - you can use a whole wheat flour if you prefer
- Cinnamon
- Nutmeg
- Baking soda
- Salt

Leave the cake pan uncovered and place it into a preheated oven set at 345 degrees F. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
When it is done baking, remove from the oven and allow it to rest for about 10 to 15 minutes. Carefully remove the bread from the pan and allow to cool a little bit longer.
How to make Instant Pot Banana Bread
Once the batter is in the cake pan, cover it with aluminum foil. Crimp the edges of the foil gently to seal it in.
Add a cup of water into the inner pot of the Instant Pot. Place the trivet on the bottom and then place the cake pan on top.
Place the lid on the Instant Pot, seal the vent, and pressure cook for 50 minutes. When the timer goes off, allow it to naturally release pressure.

Oh my! First attempt at a cake in the instant pot. Delicious, just so tasty. I used mixed spice as i couldn't find the nutmeg, and wholemeal flour and added a little more home made plant milk. Will be making this again.
