Eggless Banana Bread Ingredients

Banana bread is an easy to make quick bread. This means once you combine the ingredients, you don’t need to let it rise, so is more like a muffin or cake than an actual bread. Here’s what you’ll need for this recipe:

  • Ripe bananas
  • Vegetable oil 
  • Milk / non-dairy milk 
  • Brown sugar 
  • Vanilla extra 
  • Unbleached all purpose flour or bread flour - you can use a whole wheat flour if you prefer
  • Cinnamon 
  • Nutmeg 
  • Baking soda 
  • Salt

We love adding a little glaze to our banana bread for added flavor and sweetness. Here is what you need for the glaze:

  • Confectioners sugar 
  • Salt 
  • Unsalted butter - you can use vegan butter for a vegan variety
  • Table cream, milk, or dairy free milk (use dairy free for a vegan bread)
  • Vanilla extract

Preparing the batter

There are two ways to cook this eggfree banana bread: in the Instant Pot or in the oven. Either way, you start with the same steps to prepare the batter.

If you are baking the bread, preheat your oven now to 345 degrees F. If using the Instant Pot, skip this step.

In a large mixing bowl, mash the bananas and then add the brown sugar, vanilla, oil, and milk. Whisk it all together until it is well incorporated. 

Once the wet ingredients are combined, mix in the flour, baking soda, salt, cinnamon, and nutmeg. Mix it all together until it is well combined. Do not over-mix or the bread can come dense and chewy.

When the batter is prepared, grease the cake pan with oil or a non-stick spray. Next, spoon the batter into ​the cake pan. 

From here, follow the steps below to either bake or make the bread in the Instant Pot.

How to bake Eggless Banana Bread in oven

Leave the cake pan uncovered and place it into a preheated oven set at 345 degrees F. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

When it is done baking, remove from the oven and allow it to rest for about 10 to 15 minutes. Carefully remove the bread from the pan and allow to cool a little bit longer.

How to make Instant Pot Banana Bread

Once the batter is in the cake pan, cover it with aluminum foil. Crimp the edges of the foil gently to seal it in.

Add a cup of water into the inner pot of the Instant Pot. Place the trivet on the bottom and then place the cake pan on top.

Place the lid on the Instant Pot, seal the vent, and pressure cook for 50 minutes. When the timer goes off, allow it to naturally release pressure.

Once the pin drops, carefully open the lid and use silicon gloves to remove the trivet using the trivet handles. Carefully remove the foil and allow the banana bread to rest for 10 minutes before pushing it out of the pan or inverting it and allowing it to come out.

Serving the Banana Bread with Vanilla Glaze

To make the optional vanilla glaze, whisk the ingredients together in a small bowl. You can then drizzle if over top of the cooled bread. If you want to make the glaze vegan use a dairy free milk.

Tips for making a moist and fluffy eggless banana bread

Follow these tips and tricks in order to get the best results.

  • Make sure you use ripe to overripe bananas and err on the side of too much banana rather than not enough.
  • If using a whole wheat flour, adjust the liquid level as needed.
  • Don’t over bake the bread if baking in the oven.
  • Don’t forget to grease the pan  or it can be very difficult to remove the bread.
  • To make the bread vegan, use a plant based milk.

Can I add nuts to this bread 

Banana bread often has nuts in it. You can easily add walnuts or almonds to the batter. This will not alter cooking times or other ingredients.

Can I use a natural sweetener? 

This recipe has been tested with monk fruit extract and the bread turns out exactly the same. This recipe hasn’t been tested with dates or other sweeteners, so you may find slightly different results. If you use a different sweetener, let us know how it came out in the comments!

I don’t have bread flour, can I use all purpose flour? 

Yes, you can use all purpose flour. We tested this recipe using all purpose flour as well and found similar results. We recommend bread flour because it has a higher protein content, which creates a really good texture.

How do I store banana bread?

You can store this eggfree banana bread in an air tight container on the counter. Allow it to cool completely and then place in the container.

You could wrap it tightly in plastic wrap or place it in a sealable bag as well. 

Whatever you do, try to remove as much air as possible. It should store for about 3 to 5 days on the counter.

Can I freeze banana bread?

Yes, you can freeze this eggfree banana bread. We recommend allowing it to cool and then wrapping tightly in plastic wrap. Once wrapped, place in a freezer safe bag and push out any extra air. You can freeze it for up to 6 months. When you are ready to eat, allow it to thaw on the counter. You can toast slices to help warm it up.

Can I make this banana bread vegan? 

Yes, you can easily make this banana bread recipe vegan. To make a vegan banana bread, you can either skip the glaze completely or use non-dairy milk instead of regular milk in the recipe. It will bake up the same.

Can I make it with whole wheat flour?

Yes, you can make this with whole wheat flour, but the texture will likely change. We tested this with all purpose flour and bread flour, both work great. Whole wheat flour has a slightly different texture, so using it can alter the texture and taste a bit.

Oh my! First attempt at a cake in the instant pot. Delicious, just so tasty. I used mixed spice as i couldn't find the nutmeg, and wholemeal flour and added a little more home made plant milk. Will be making this again.
