Black eyed peas - We prefer to use dry black eyed peas rather than canned. So much more economical and free of preservatives. You can read more about cooking dry beans (chickpeas / black beans/ kidney beans) in Instant Pot in our post Instant Pot Beans. So depending of how much time we have we sometimes soak them for atleast 30 minutes and if we are short on time we often just cook them directly. You can even used canned beans if you don't have dry beans handy, however the cooking times will change.
Vegetables - We use onions and tomatoes for the curry base here. Onions help thicken the curry while the tomatoes add a nice tang. fresh ginger not only helps ease digestion but also enhances
Spices - You can definitely play around with what spices you have available in your pantry. We have added cumin seeds and carom seeds which are very similar in taste to thyme. If you don't have carom seeds or fresh thyme available you can just add cumin seeds. adding carom seeds ease the digestion of these peas. We also add some turmeric, paprika, and coriander powder. If you don't have these ingredients you can even use a curry powder or garam masala.
Water or broth - to bring out the curry flavors we add water. However if you want to enjoy this as a soup feel free to add broth and throw in your veggies if you like. Adding veggies will not change the cooking times.
Oil - to saute the onion and tomatoes
Garnish with garam masala (optional) cilantro and lemon juice for a burst of flavors.
Vegan Instant Pot Black Eyed Peas Curry
Making black eyed peas in an Instant Pot is so quick and easy. Here is just a gist of the steps involved. You can find the detailed recipe with ingredient measurements in the recipe card below.
Step 1 : Prepare ingredients - Gather the black eyed peas and wash them, onions, tomatoes, spices, water, herbs and lemon juice. if you have 30 minutes, soak the peas or else you can skip the soaking process. Chop the onions and tomatoes. Grate the ginger.
Step 2: Saute - Using the Saute function on the Instant Pot, heat the inner pot. Pour oil. Once the oil is hot, add the spices and saute until you can smell the aroma then add the onions and saute until translucent. This will take a couple minutes. Throw in the ginger and tomatoes and saute for another 3 minutes until the oil starts separating. Throw in the peas, salt and water.
Step 3: Pressure Cook - Cover the lid, seal the vent and pressure cook based on below
- Dry Black Eyed Peas : 20 minutes, followed by Natural Pressure Release.
- Soaked Black Eyed Peas : 15 minutes, followed by Natural Pressure Release.
- Canned Black Eyed Peas : 5 minutes, followed by Natural Pressure Release.
Step 4: Garnish and Serve - Carefully remove the lid, garnish with garam masala, cilantro and lemon juice and serve with rice or flatbreads.
Soaked / Unsoaked / Canned Black Eyed Peas?
It's always a great idea to soak the black eyed peas as they become easier to digest and avoid bloating. However often times there is no time to soak because ideally the dinner should have been ready like 10 minutes ago. Yes, has happened with me a few times. So you can often skip the soaking and just directly throw in the peas directly after rinsing them thoroughly.
Can I make this on Stove Top?
Don't own an electric pressure no worries, you can make this on stove top too. Although we are big fans of our electric pressure cookers as they have made our lives so much easier in the kitchen. These black eyed peas go really well with rice or with an Indian flatbreads like roti or naan or even an artisan toasted bread. Our favorite is rice though.

Yes you can either refrigerate or freeze these black eyed peas. if you refrigerate them, they will be good for upto 2-3 days. If you freeze them in freezer safe containers you can freeze them for upto 3 months.

- 1/2 teaspoon carom seeds
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric

- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala if you don't have all above spices
- 1/2 teaspoon ginger, grated
- 2 cups water
- salt to taste
