A delicious Chickpea Salad with Avocado Cilantro Dressing. My go-to lunch lately as it comes together so quickly. Loaded with good fats, lots of fiber and fresh vegetables and herbs.
Guess what friends? My mom is finally here with us in the US. She arrived last evening after a long 20 hours flight. Yup, it takes us that long to travel from India to the US or vice versa. BTW that is just the flight time, not counting the layovers. Phew!!! Long journey, but it's the end of the journey that is always rewarding right? We were all so emotional when we met last evening. When I say we, I mean, my mom, my sisters, Dr.Mystery, BIL, Little A and ofcourse myself. We were all trying to put up a brave front for each other, making sure the tears don't roll down. They were tears of joy, the joy of uniting together after a long wait. They were also tears of sorrow, remembering that the last time we were all together my dad was a part of it all too. After a few brief moments, we all put our loss behind and were grateful to God, that we are all together now.
Now that mom is here, you will be seeing a lot more salads from me. Well, she loves salads, you love our salads and also it's perfect time of the year to enjoy fresh crisp fruits and vegetables. Mom's favorite salads from the blog are the Southwest Chipotle Salad and the Autumn Apple Pecan Salad. Infact the last time she was here, I shared some of her recipes on the blog too. This trip, I am looking forward to spending some great time with her and learn more of her tricks and ideas that I can incorporate into my daily lifestyle.
The fact that she loves salads, my plan to make and try different salads everyday day. If you have been following our stories on Instagram & Facebook, you will know we take our salads seriously and often times on Friday nights, dinner is a lip-smackingly delicious salad. So I am making a list of some of the salads I want to make for her and this Chickpea Salad with Avocado Cilantro Dressing is one of them. I've tried this salad so many times in the past (ya I never got around putting it on the blog) and I think mom will like it too because she loves the 5-minute Avocado Cilantro Dressing. It's not like I don't make other dressings, but this one is my current favorite. I enjoy it anything I can, like samosas, dosas, idlis, slather it on a slice of bread, dip my veggies or chips into it. It's one versatile dressing.
The dressing is what sets this salad apart for sure. The flavors are lip-smackingly delicious. Made with Avocados, Cilantro, Yogurt, Cumin, Garlic and Lemon Juice, this dressing is a burst of flavors in the mouth. This salad comes together so easily with simple kitchen staples. A great salad when you want to empty your refrigerator. It's easy to pack for lunch too. Apart from the flavors, I love how nourishing this bowl is. You get the goodness of legumes from the chickpeas. Loaded with fiber. The good fats from the Avocados. Fresh veggies, all in one bowl. It's good for you, so make sure you try it.
Chickpea Salad with Avocado Cilantro Dressing
Ingredients
- 8 oz. garbanzo beans / chickpeas cooked
- 1/4 cup cherry tomatoes
- 1/4 cup onions, diced
- 2 tablespoon cilantro, chopped
- 1/2 cup avocado cilantro dressing
Instructions
In a large mixing bowl, toss all the ingredients together. Mix well and garnish with some cilantro.Serve it cold or room temperature.
!For Lunch-To-Go
Add all the ingredients in a mason jar and pack the dressing in a separate container. Add the dressing to the salad just before eating.
