Charro Beans Instant Pot Recipe

Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- 4 cloves garlic minced
- 2 tomato diced
- 2 tablespoon tomato paste
- 1 pablano pepper
- 1 pound dry pinto beans thoroughly rinsed
- 5 cups low sodium veggie broth / water (1/2 cup more for well done)
- Salt to taste
- 1 tablespoon dried oregano
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 bay leaves
Instructions
- Using an electric pressure cooker, set to saute. Add olive oil.
- Add Minced garlic & chopped Poblano pepper.
- Add in the onion , tomato, and tomato paste . Cook until tender.
- Add salt to taste, cumin powder, paprika,dried oregano .
- Add in the beans and broth. drop in the bay leaves.
- Cook on high pressure for 45 minutes/ 50 minutes for well done. Allow a complete natural release.
- Serve Immediately.
- Optional - garnish with pico de Gallo, cilantro, and avocado
Notes
If you want to speed up cooking time, soak for 3 hours before, then cut 10 minutes off the cook time.
Remember it takes time for the instant pot to prepare the desired pressure, so keep that in mind. To speed things up, I like to use hot water.
Let naturally release for a time, but after 15 minutes you can just quick release.
Use 1/2 cup of water/broth more and 50 minutes of cook for restaurant like mushy texture / well done beans.

I just made these, and they’re delicious! I only made 1 cup of pinto beans, so I kind of cut everything else in half: 2 cups of vegan chicken broth, maybe a tablespoon of tomato paste, and a half can of Rotel (for the green chilis, as I had no fresh peppers). I also added a teaspoon or so of ground coriander.
I had soaked the beans overnight, so I followed your suggestion and pressure cooked for 35 minutes—perfect! I have the Instant Pot Mini (3 quart size), and I love it. It’s a great size for one or two people. And it’s so handy that you can sauté right in the same pot.

I made this tonight. We really enjoyed the beans! I modified it a bit. I didn’t have any tomato paste (my bad), so I used about 1/3 can of tomato sauce. I par boiled the beans for 10 minutes, and then drained and rinsed them. I also used chicken stock instead of vegetable broth. My husband got seconds. He never does this. Thank you for the delicious, healthy recipe. Using the instant pot for a pretty quick cook was great.

I agree with the person who said they need to be cooked longer. Expect ranch style beans more so than traditional charro beans... but this recipe is so good! I have made it sooo many times- doubled the recipe and serve it over rice. note: I do add double the tomato paste so I don't waste any because I never tend to use the leftovers :)

OMG. These are now on my 'regular menu' rotation. Wonderful way to fix my Pintos, such flavor and so easy. I am plant-based Vegan -and don't eat Oils...so I left out the oil...not missed at all. This is the best beans recipe EVER! Thank you for posting your recipe. I didn't have a poblano pepper, so I substituted a 7-oz. can of chopped green chiles. I heated my homemade vegetable broth before I added it to the pot to reduce the time it took to reach full pressure. I'm glad I went with the longer 50-minute pressure cook time. A full natural release took about 50 more minutes.

I make mine a little differently. I start with sautéing diced bacon then add onion and garlic. I also add tomato, but I use more fresh and skip the paste. I use a Serrano pepper instead of a poblano. I make a slit in the Serrano and add it whole. In place of all the spices, I add a huge handful of cilantro leaves and stems. This is my mother-in-law’s recipe. She is from northern Mexico.
