Spicy Korean noodles or gochujang noodles are a popular Korean dish and our new favorite go to noodle recipe. It is spicy and savory, but also sweet with a hint of sourness.
We make our gochujang noodles in the Instant Pot. This makes it super easy, but we also provide you with instructions on making on the stove top.
When we make this spicy Korean noodle recipe, we pack it full of veggies. But if you want to add your own, you easily can! You can also easily add in some additional protein, like tofu or beans.
What is Gochujang?
Gochujang, known in English as “red chili paste,” is a sweet, savory, and spicy fermented condiment. It is popular in Korea and Korean cooking.
It is made from glutinous rice and other ingredients that are fermented. The sweetness comes from the starch of the cooked rice. Fermentation adds a bit of a sour flavor and sweetness.
Ingredients to make Spicy Korean Gochujang noodles
When you want to make spicy Korean noodles, you will need the following ingredients for the spicy sauce:
- Gochujang sauce - You may be able to find this at a local Asian food store or online.
- Soy sauce - You could sub in tamari as a gluten-free option when you make Korean spicy noodles.
- Rice vinegar - You could use white wine vinegar in a pinch.

How to make Gochujang Noodles in Instant Pot
When you want to make spicy noodles Korean style in the Instant Pot, you will want to follow these simple instructions:
- First, heat oil in the Instant Pot on saute mode
- In a bowl, mix the ingredients for the sauce as the oil heats.
- Next, add the ginger, garlic, onions, the sauce, and the broth or water to the Instant Pot and then give it a stir.
- Once mixed, break the spaghetti into half and add it in a criss cross pattern like a bird’s nest to the inner pot. Lightly immerse the spaghetti into the liquid using a spoon or spatula.
- Next add the layer of veggies (except for spinach) and close the lid.
- When the valve is set to sealing, pressure cook for 3 minutes followed by a natural pressure release. After 5 minutes, release all the pressure, add the spinach, and then gently stir the noodles.
- Finally, garnish with scallions and sesame seeds before serving them hot.
How to make spicy Korean noodles on stove top
If you don’t have the Instant Pot, you can make Korean spicy noodles on the stove top. To do this, follow these instructions:
- First, heat the oil in a medium pot. As the oil heats, bring a pot of water to a boil and then cook the noodles according to the package instructions. When they are done, set them aside.
- In a bowl, mix the ingredients for the sauce as the oil heats.
- Next, add the ginger, garlic, and onions to the oil and saute for about 1 to 3 minutes or until fragrant.
- Once fragrant, add in all the remaining veggies except for the spinach and saute for about 5 minutes or until they start to cook some.
- Next, add the sauce to the veggies and allow it to cook down some.
- Once the sauce has started to reduce, add in the cooked noodles and spinach.
- Finish cooking the sauce until it reaches your desired level of thickness.
- Finally, garnish with scallions and sesame seeds before serving them hot.
Pro Tips to make the best spicy Korean noodles
Korena noodles are even easier to make when you follow these simple tips and tricks for success:
- Don’t over cook the noodles. They will get mushy.
- Also, don’t stir the noodles once you put them in the Instant Pot. Just lightly push them into the liquid.

Omg this was so good!!!! I used regular spaghetti. My store didn’t have Gochujang so I found a spicy Korean marinade. I made more sauce than the recipe called for and man this was just absolutely delicious!! Came out perfect in the IP.

We quadrupled the recipe and were very happy with the result. We had to use regular spaghetti, so it was slightly al dente. Interspersing spaghetti and vegetables may help with mixing.
