Tomato soup and cream of tomato soup share a lot in common. They both use tomatoes as a base for the soup. You can add herbs and spices to each. And they are great for cool days when you want something warm to eat.
The main difference between cream of tomato soup and tomato soup is cream. To finish this recipe, you need table cream, light cream, half and half, or another creamy dairy substitute.
Homemade Cream of Tomato Soup Ingredients
When you want to make this cream of tomato soup recipe, here’s what you’ll need to have on hand:
- Butter - You could use olive oil if you prefer.
- Yellow onion
- Garlic
- Tomatoes on the vine - If you can’t find these, plum tomatoes can also work.
- Tomato Puree - You can use your preferred brand.
- Italian Herb Mix - You can use your preferred brand.
- Vegetable broth - You could use water instead, but the broth adds a bit more flavor.
- Salt - If you prefer, you can omit since the vegetable broth has salt as well.
- Sugar - You could use a sugar substitute if you prefer.
- Table cream - If you don’t have table cream, heavy cream, light cream, half and half, or potentially whole milk could work. You may also have success with a neutral non-dairy milk if you want to make this vegan.
For garnish on each bowl, we recommend also having:
- More table cream
- Freshly cut chives or parsley
- Cracked red pepper
- Croutons

How to make Cream of Tomato Soup
First, grab down your Instant Pot and turn on the Saute function. Once it gets hot, melt the butter or heat the oil in the inner pot.
When the butter melts, add the onions and garlic and then sauté until they soften. Next, add the tomatoes, tomato puree, Italian herbs, salt, sugar, and broth or water.
Finally, give it all a stir before closing the lid. With the lid in place, set the seal to closed and then pressure cook for 8 minutes followed by a natural pressure release.
Once the pressure releases and the pin drops, open the lid carefully and use an immersion blender to blend until smooth. If you don’t have an immersion blender, you can carefully pour the soup into a high power blender, mix until smooth, and then pour back into the Instant Pot when ready.
When the soup has a smooth consistency, pour in the table cream or vegan cream. Next, turn on the sauté function and bring the soup to boil, stirring occasionally.
Once the soup thickens to your liking, pour it into bowls and then garnish with table cream, chives or fresh parsley, red pepper flakes, and crotons. Serve immediately.
